If you won't drink a wine then you shouldn't cook with it.
I'm not understanding this line of thinking. I don't drink wine and I cook with it all the time.
It adds great flavor.
We wound up adding a bit more sugar to it, but I think it was because of the wine (I added 1/2 cup). It might be just that we aren't really used to it in sauces.
