What kind of cookies are you baking this year?

I have the same recipe as the Rolo cookies but you use Hershey's Kisses. I think the cookies are called Peanut Butter Kisses. In my recipe, you don't put the chocolate on the cookies until after you bake them. Right after you take them out of the oven, you press a Hershey's Kiss in the middle of each cookie. The bottom of the kiss melts into the cookie and sticks there but the rest of the kiss doesn't melt. They're one of my favorite kinds!

I usually bake 4 kinds of cookies each year but my best are my cut and frosted sugar cookies. My sugar cookies have become a legend at my sons' elementary school. The room mom from my 5th grader's class called the other day to ask if I would bring a big plateful to the class party on the 15th. Well, guess what I had to tell her? My son won't be at the class party because we are flying to WDW on the morning of the 15th! And since we're not coming back until Christmas day, I won't be baking any cookies this year at all. I told my boys that we would be having plenty of cookies on our trip! I think a 10-day trip to WDW is a good enough trade-off for a year without cookies! :woohoo:

I always WANT to make Christmas cookies, and we usually make up a batch of chocolate chip (and we always make pumpkin raisin bread), but I never know what the heck I'll do with them?! What do you all do with all of these cookies? We won't be around a lot of family this Christmas, so there's no "sharing" them, and I already make up the pumpkin bread to bring around to friends (I buy the cute little ceramic bread pans from Micheal's for $1 each). . . We have to get the cookies out of our house as I have NO self control with sweets!!! We love to share our cookies. An elderly neighboor, a young mom with no time to bake, a local nursing home, people that serve you all year such as a paper boy or hair stylist would love a plate of cookies and what a great lesson to teach the kiddies!!!!!!!!

Ohhhh, I forgot, I will also make pizelles (sp?).

I've never had the guts to try gingerbread....is it hard?
 
The gingerbread that I made came from northpole.com. It wasn't that hard to make. The problem came in the fact that if you messed with it too much (rolled it out several times, using up the scraps), it became tough. But, it still tasted the same in the end, so I guess that works!


BTW, what are pizelles?

Yikes...almost all of our family traditional cookies will be nixed this year since my DD is allergic to peanuts and all tree nuts. We found out last Jan.
In the past I have made:
Date Bars w/powdered sugar (walnuts)
Chocolate Fancies (Chocolate merangue cookies w/walnuts)
Dream Bars (assorted nuts)
Almond Crescents
Thumbprint cookies (assorted nuts)
Peanut Butter Kiss Cookies
M&M Cookies

Geez....no wonder why she's allergic! I probably gave her a nut overload! ;)

So...I've got to come up with something else....we just did homemade chocolate chip for Thanksgiving since we travelled to relative's house that does not take nut free into account.

My kids love doing a gingerbread house but we use a kit. They do not care for gingerbread cookies, which makes me sad because they would be so fun to decorate.

Does anyone have any suggestions that are different and fun to make?
(Besides sugar cookies)

I printed off a Gingerbread Man cookie recipe from www.allrecipes.com that is made with a package of cook and serve butterscotch pudding and no molasses. It got really good reviews, so we'll be trying that one out this year. My kids love gingerbread, but they don't like it too spicey, and these are supposed to be mild. We'll see...
 
I just revisited this thread and noticed the interest in the Black Bottom recipe...

Here you go...

8 oz. block of cream cheese, softened
1 egg, beaten
1/2 cup sugar
1/8 tsp. salt
6 oz. chocolate chips


1 1/2 cup flour
1 cup sugar
1/4 cup cocoa
1 tsp. baking powder
1/2 tsp. salt
1 cup water
1/2 cup oil
1 tsp. vinegar (I use white)
1 tsp. vanilla

Preheat oven to 350. Use mini baking cups. (these are kind of hard to find, I got my trays and the little paper inserts at Micheals, I can never find the mini ones at the grocery store) Mix the top five ingredients in small bowl and set aside. Mix well the remaining ingredients in medium sized bowl. Fill each baking cup 2/3 full with chocolate mixture. Add approx. 1/2 to 3/4 tsp of cream cheese mixture on top of the chocolate mixture in each cup. Bake 20 mins.

These make a delicious mini cupcake treat. The chocolate cake on the bottom is a light, not too sweet, cake. The cream cheese mixture adds a creamy, sweet flavor baked in the middle.
 
Thanks mousketeer_mom! They sound delicious! I have to bake for dd's preschool Christmas program and I think these will fit the bill. May have to set aside a few (or many!) for me!
 
I made the rolo recipe that I linked here that is a chocolate cookie base: We put Dove Caramels in, instead of rolos. They were heavenly! I highly recommended them! They were really, really good!
 
You ladies are an inspiration! For some reason in my house the fancier I get the less chance of it being eaten. I usually make shortbread, rice tarts, fudge and sugar cookies. Anything chocolate gets inhaled so therefore I am going to make the rolo and black bottom things and I will win mom of the year award...in my house anyways;)
