What is your Thanksgiving menu

I don't have a set meal plan but usually there is some mixture of the following items:

Turkey
ham
mac and cheese
mashed potatoes and gravy
sweet potato casserole
green bean casserole
squash casserole (always a hit)
One pan of regular dressing
one pan of oyster dressing
cranberry sauce
rolls
Sweet potato pie
pumpkin pie
nutty buddy pie
cherry cheesecake
7 layer salad
deviled eggs
pickles
olives

I have had years where I try to do some fru fru Martha Stewart different than usual stuff, and even when I think it tastes great, it doesn't go down well with my family. They don't appreciate someone wrecking their holiday with menu item newbies. For example one year I made a grand marnier cranberry relish from scratch and everyone hated it and wanted the canned stuff. I ate it so I know it was good, they just didn't want something new! LOL!

Yam Casserole (so yummy--has brandy, orange juice, brown sugar and pecans)
Cranberry Sauce (a couple kinds)

Hot artichoke dip

1-3 cheeses

Mini Latkes

Mini hot dogs with a good mustard sauce for dipping

Gruyere crisps

Assorted chips / pretzels


Dinner:

Cornbread

Salad

Zucchini and yellow squash with rice or rice noodles in a creamy basil pesto sauce

Mashed potatoes

Sweet Potato pie with marshmallows

Acorn squash with maple syrup

Turkey



Dessert:

Brown Sugar Cinnamon Apples

Williams - Sonoma choclate cake

French Vanilla Ice Cream

Pumpkin Flan
2 cups sugar
1 cup whole milk
2 (5-oz) cans evaporated milk (1 1/3 cups)
5 large eggs
1/4 teaspoon salt
15-oz can solid-pack pumpkin (1 3/4 cups)
2 tablespoons premium golden agave tequila such as Herradura Reposado, or bourbon
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Preheat oven to 375°F.

Heat a 2-quart souffl&é dish or round ceramic casserole in middle of oven.

Cook 1 cup sugar in a dry 2-quart heavy saucepan over moderately low heat, stirring slowly with a fork, until melted and pale golden. Cook caramel without stirring, swirling pan, until deep golden, about 5 minutes. Quickly and carefully remove hot dish from oven and immediately pour caramel into dish, tilting it to cover bottom and sides. (Leave oven on.) Keep tilting as caramel cools and thickens enough to stay in place.

Scald whole milk with evaporated milk in a saucepan and remove from heat. Beat eggs and remaining cup sugar with an electric mixer until smooth and creamy. Beat in salt, pumpkin, tequila, and spices. Pour milk mixture through a sieve into a bowl and beat into pumpkin mixture in a slow stream until combined well.

Pour custard over caramel in dish and set in a water bath of 1 inch hot water. Put pan in middle of oven and lower temperature to 350°F. Bake until golden brown on top and a knife inserted in center comes out clean, about 1 1/4 hours, possibly longer. Remove dish from water bath and transfer to a rack to cool. Chill flan, covered, until cold, at least 6 hours.

To unmold flan, run a thin knife around flan to loosen from sides of dish. Wiggle dish from side to side and, when flan moves freely in dish, invert a large serving platter with a lip over dish. Holding dish and platter securely together, quickly invert and turn out flan onto platter. Caramel will pour out over and around it. Cut flan into wedges and serve with caramel spooned over

SERVES 12 , 1 1/2 quart



  1. Cream butter and sugar.
  2. Add eggs, 1 at a time.
  3. Stir in pineapple.
  4. Fold in bread cubes.
  5. Place in 1 1/2 quart casserole dish.
  6. Bake 1 hour at 350 F degrees.

I amd trying new recipies for stuffing, soup and sweet potatoes along with a new recipie that I found for a cheesecake
 
Well, not too long ago I would have said our usual traditional stuff, but I am now trying to eat differently and lose some weight.

I have found some really good sounding "low cal" recipes for Thanksgiving type foods and plan to mix those in with the other more traditional things. That way no one can tell me "but its Thanksgiving"
 
The great thing about shopping for your Thanksgiving menu is, if you forget your shopping list you can always borrow one from someone else.:thumbsup2

We typically don't do T-Day at our house (we have Christmas Eve) and every year we bring Butternut Squash Soup to SIL's which is Wolfgang Puck's recipe. It is very rich and has a cranberry and cardamom cream topping. It is a huge hit every year!

When we cook a turkey, putting it in a brine is always a must. One year DH cooked the turkey up-side-down by accident. It was the moistest turkey I ever had! Turns out some people do this on purpose to get the juices to cook into the breast. Oh, don't make the mistake we made Christmas Eve last year. My Mom used juice from cooking the turkey to make gravy. Well, when you brine a turkey there is TONS of salt in the juice. The gravy was very salty and we had to toss potatoes into it before serving to absorb the salt.

Side note: I am dreading the mashed potatoes, as I dread every year. The womnan who brings them to my SIL's is the nicest woman but should be banned for life at making mashed potatoes-lol. She mashes-up potatoes and puts nothing in. No butter, no sour cream, no half and half or milk... nothing to make them creamy! Maybe I will sneak in someting this year to spike them! :rotfl2:

I can't wait to try the pineapple stuffing posted earlier. I have a turkey breast in my freezer and a crockpot recipe to try out. I am going to make this with it!
 
And never a southern dinner without a jello mold;)

My Mom makes a lemon jello mold for Christmas Eve dinner at my house every year. I LOVE IT, now she borrows my mold and makes 2 so I have leftovers! :rotfl:Problem is lemon jello can be a pain to find!

I know I won't be eating turkey that day. Yes, it's sad and true. :( My sister-in-law hosts Thanksgiving and gets this nasty organic, fresh-killed turkey. It tastes like something the dog hunted down and dragged in from the yard. Gimme Butterball!

I bring homemade cranberry sauce and pie. I sell pies as a fundraiser for DS's band, so it's one of those.
