After looking over the menu at the Tangierine Cafe in Morocco, I am curious as to the ingredients in hummus and couscous. I know I have seen hummus in the refrigerated cases at the supermarket and the packages of couscous in the rice/pasta isle, but I really have no idea what they consist of. Can anyone enlighten me :D Thanks !!

Here's a link that gives you the answer on Couscous

Here's one for Hummus.

I like both, but my preference is a garlic Hummus with warm pitta bread :D. They often have some nice hummus choices (usually 3) at Boma's in the AKL and couscous is often on the buffet there as well. IMHO Boma's offers an excellent chance to taste some different styles that you won't often find in regular US restaurants/hotels.

Hummus is made of ground chick peas, sesame paste, garlic and usually lemon juice. Many cooks also add some olive oil and extra flavorings (sundried tomatoes, scallions, lemon peel, parsley, etc.).

Couscous is a fine pasta-like food made from semolina flour that looks like a grain. It cooks up quickly in hot liquids (water or broth) and has a "fluffy" texture.

Thanks for your replies!! I am not too adventurous when it comes to food, but I think I will give the Tangeriene Cafe a try :)
