What do you make with boneless, skinless chicken breasts?

we eat chicken so much it's become a joke around here! I'm making chicken bites tonight, you coat the chicken with flour and seasonings, bake them then toss them in a covered bowl with a little hot sauce or bbq sauce, sooo good! I'll probably make rice or veggies with it.

Other than that...I make chicken tacos, marinated grilled chicken, chicken caesar salad, chicken stir fry, oven fried chicken, chicken jumbalaya, chicken parmigiano, italian chicken wraps.

I feel like Bubba in Forrest Gump but I'm talkin about chicken instead of shrimp. :)
 
I like to make Chicken Marbella and put it over pasta.
 
Chicken Marsala.

Dust with flour and pan sear the chicken (carmel color on boths sides)

Add one cup of marsala wine to the pan. Cover and simmer until chicken is cooked to the right temp. (165) Timing is dfferent depending on the thickness of the chicken. You can add mushrooms to the sauce, I don't because I don't like mushrooms.

After cooking remove chicken from the pan. I melt some butter and stir in into the drippings in the pan to make a suace to pour over the chicken. Serve with rice or pasta. Yum yum!

Last week I made parmesan chicken (not chicken parmigiana). I use 4 chicken breasts since there are 4 of us.

1 cup flavored italian bread crumbs
1/2 cup grated parmesan cheese (from the green can)
1 tblspn frsh chopped parsley (optional)
extra virgin olive oil

Mix together bread crumbs, parmesan cheese & parsley in a medium bowl, set aside.

Pour just a little olive oil in a dish & dip your rinsed & paper towel patted dry chicken breast in the oil to coat both sides.

Dip in the bread crumb mixture, covering chicken completely & place in a baking dish/pan.

Once you've breaded all your chicken pieces, just dump the rest of the bread crumb mixture over your chicken pieces. Melt 1/4 stick margarine (lately I've just drizzled some EVOO on each chicken breast instead of using margarine or butter but the margarine makes it more moist), & pour evenly over each chicken breast. Bake at 350 degrees for an hour. They come out so tasty & moist!

Serve with a potato dish or a pasta side (like even one of those enveloped pasta dishes or rice dishes) a fresh veggie (my fave to make with this dish is just fresh, steamed asparagus spears with a drizzle of EVOO or fresh green beans covered & boiled for maybe 6 mins & then add to a pan about 2 to 3 tablespoons of EVOO & some FRESH pressed or minced garlic & then sautee your drained green beans for about 3 mins.) Salt & pepper & if its anything like at my house, your kids will be fighting over the last green bean!

I'm making tacos tonight but after all this talk about chicken & Tina's recipe, I think it will be chicken tomorrow!

I make something I call spicy chicken. I season the chicken breasts with Season All season salt and Nature Seasons and then brown in olive oil, add a can of Rotel tomatoes, a can of mexican recipe stewed tomatoes, mushrooms, serve over rice. It's really good.

The other main way we will do chicken is to just use the season all and nature season and garlic powder, rub into the chicken and cook it on the George Forman Grill, we serve it with either Uncle Ben's Garlic Butter Rice or the Pasta Roni Garlic Herb pasta.

Another favorite is Hawaiian Chicken:
Hawaiian Chicken

12 chicken breasts, boned
½ cup soy sauce
5/8 cup white wine
1 ¾ cups pineapple juice
¼ cup red wine vinegar
3/8 cup sugar
½ tsp. garlic powder
1. Place chicken in baking dish.
2. Mix remaining ingredients and pour over the chicken
3. Marinate in refrigerator for 2 days
4. Cook on grill, over medium heat, for 10-12 minutes per side or until juices run clear when pierced


And another favorite is the Alice Springs Chicken from Outback:
Honey Mustard Marinade:
½ cup Grey Poupon Dijon mustard
½ cup honey
1 ½ teaspoons vegetable oil
½ teaspoon lemon juice


4 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
2 cups sliced mushrooms (10 to 12 mushrooms) 2 tablespoons butter
Salt
Pepper
Paprika
8 slices bacon, cooked
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar Cheese
2 teaspoons finely chopped fresh parsley

1. Use an electric mixer to combine the Dijon mustard, honey, 1 ½ teaspoons oil, and lemon juice in a small bowl. Whip the mixture for about 30 seconds.
2. Pour about two-thirds of the marinade over the chicken breasts and marinate them, covered, in the refrigerator for about 2 hours. Chill the remaining marinade until later.
3. After the chicken has marinated, preheat the oven to 375°F and heat up an ovenproof frying pan large enough to hold all four breasts and 1 tablespoon of oil over medium heat. (If you don’t have an ovenproof skillet, transfer the chicken to a baking dish for baking.) Sear the chicken in the pan for 3 to 4 minutes per side or until golden brown. Remove the pan from the heat, but keep the chicken in the pan.
4. As the chicken is cooking, in a small frying pan sauté the sliced mushrooms in butter.
5. Brush each seared chicken breast with a little of the reserved honey mustard marinade (not the portion that the chicken was soaked in), being sure to save a little extra that you can serve on the side later with the dish.
6. Season the chicken with salt, pepper, and a dash of paprika.
7. Stack two pieces of cooked bacon, crosswise, on each chicken breast.
8. Spoon the sautéed mushrooms onto the bacon, being sure to coat each breast evenly.
9. Spread ¼ cup of Monterey Jack cheese onto each breast followed by ¼ cup of Cheddar.
10. Bake the pan of prepared chicken breasts for 7 to 10 minutes or until the cheese is thoroughly melted and starting to bubble.
11. Sprinkle each chicken breast with ½ teaspoon parsley before serving. Put extra honey mustard marinade into a small bowl to serve on the side.
 
Chicken broccoli, & pasta, Chicken scampi, Chicken parm, Chicken terryaki....

I used to like cutting it up and cooking it with the "Chicken Tonight" sweet & sour sauce, but they stopped making that. :(
 
Here are a few ideas..

I put mine in a crockpot with a jar of salsa and cook all day. Then take it out and shred it to and put cheese and sour cream on top. Yummy, yummy.

Also I will put them in a crockpot with 1/2 bottle of Italian dressing and cook all day. Then take the chicken out and add 1/2 cup of sour cream to the juices then add chicken back into the mixture.

I also will flatten them and put slice of ham and slice of swiss cheese, then roll up. Put in a baking dish with can of cream of mushroom soup and 1/2 cup water. Then bake. Kinda like Chicken Cordon Blue without the breading.

I bought some packaged Curry mix the other day; there was a recipe on the side, which was really easy and delicious. You can add vegetables, such as peas, bell peppers, etc.

I also sautee boneless chicken breasts in a teriyaki/soy sauce mixture, then turn up the heat when they're fully cooked. This forms a nice glaze. I serve with rice and pea pods, but you could add pineapple, bell peppers, etc as in an earlier recipe.
 
Rice Krispie Chicken--My family's favorite. Crush rice krispies. Melt butter. Sprinkle salt, pepper and garlic powder on the chicken breasts. Dip chicken in melted butter. Dredge in crushed rice krispies. Place on a baking sheet. Bake at 350 about 25 minutes. (If you want you can pour the remaining melted butter over the chicken breasts--extra calories but yummy.) We always have these with mashed potatoes and corn.
 
King Ranch Casserole

1/4 cup margerine
1 med. green bell pepper,chopped
1 med. onion,chopped
1 can(10 3/4oz.) cream of mushroom soup
1 can(10 3/4oz.) cream of chicken soup
1 can(10oz.) Ro-Tel diced tomatoes and green chiles
2 cups cubed cooked chicken
12 corn tortillas, torn into bite size pieces
2 cups(8oz.) shredded cheddar cheese

Preheat oven to 325F. In a large saucepan, cook pepper and onion until tender, about 5min. Add soups, Ro*tel and chicken, stirring until well blended. In a 13x9x2 baking pan, altenately layer tortillas, soup mixture and cheese repeating for 3 layers. Bake for 40 min.
 
Last night I sauteed some mushrooms, onions and garlic in a small pan with butter and white wine. After they had cooked a bit, I threw some chicken breasts in, turned down the heat and covered the pan. When they were almost done I put muenster cheese on top and served with mushroom rice. Yummy!

You take two cups of milk and two cups of chicken broth and warm it up.
Melt 6 tablespoons of butter, then slowly stir in 6 tablespoons of flour to make a roux. Let heat for about a minute, then slowly stir in the milk/broth mixture. Add about a cup of cooked chicken, heat thoroughly, and then serve over biscuits (or rice).

YUM!
 
Chicken Marsala

cut chicken into pieces and dip in flour seasoned with salt and pepper

brown in a pan with olive oil and butter - remove when golden

add marsala wine (about a cup) and sliced mushrooms

after wine and mushrooms cook for about 5 minutes, return chicken to sauce and cook a few more minutes

we serve over linquine with fresh parsley (you can add paremesan cheese if you like)

You can also do this recipe with white wine and a little lemon, without the mushrooms
 
cut boneless breasts into big strips/chunks brown lightly and then pour "doctored up" barbeque sauce over and simmer awhile very quick and easy.
I use bottled sauce with some brown sugar and tomato sauce mixed together.
serve with rice or baked potato(microwave) My very picky non eater loves this.
 
So many great recipies have been mentioned and our family eats chicken sooooo much. I'm going to try a few.... Here's another one:

Place chicken breasts in a baking pan, drizzle with olive oil. Cook until 5 minutes left too cook (everyone has different tastes, oven temps, etc. use whatever you feel comfortable with).

Take out of oven - spread all fruit - apricot is good over each piece, then drizzle lipton's onion soup mix - put back in oven for five minutes.

** I actually use the broiler for the last five minutes, but the oven works fine too.
 
Way easy:

pound your chicken breast as thin as possible

Spread herbed cream cheese ( low fat wont work , you cannot bake with it), so a thin layer of cheese should do. You can had a slice of smoked ham or proscuito , then roll the breast (you want a long cigar , not a short one) and secure with thoothpick.

Brown all over in a pan that goes in the oven , then pour store bought pasta sauce ( without meat and preferably without sugar added if you watch you weight) Any flavor will do , in fact , you can play with a different pasta sauce everytime you do the recepie and even change the flavor of the cream cheese.

Put in a preheated 350 degree oven for 30 minutes: sserve with green, and pasta with garlic oil or rice , to get all that pasta sauce !
