What do you do on checkout day?

We normally take an early flight home but this year we're thinking about taking a 5:30pm flight to extend it just a little more :) Assuming we don't have a park ticket, what are your suggestions for things to do? We're staying at the BC but can we use the pool after checkout?
 
You can use the pool on checkout day.

We always take a late flight, but we do get a park ticket for that day. We get up early, do the luggage check-in for our checked bags and leave our carry-ons with bell services. Then we spend the day at a park and come back to the hotel about an hour or so before our DME bus is scheduled to arrive.
 
I always book the latest flight possible (after 7:00 PM)
We go to a park, usually whichever we feel like that morning, rarely planned in advance.
 

A nice breakfast or Disney Springs?
We always do Trails End Buffet on check out morning & one year when we had extra time to kill we went to Disney Springs and saw a movie
 
We bagged the early flight thing years ago because we didn't enjoy the night before with an early rush to MCO on our minds and of course nothing to do but go the last morning. Now we milk the last evening thoroughly and I still get my typical WDW morning in which is to watch the sun rise from the bench next to Atlantic Dance, cigar and coffee in hand. A leisurely trip to MCO and a Happy Hour (or 2) before the flight.

We always book late flights. It only was a bad idea one year where it was cold and rainy and we sat in the lobby for hours waiting to go home. We check our stuff with bell services, head to the park and get in as many rides as possible.
 
Enjoy some of the non-Disney attractions around Orlando. (Wax Musuem, outlet malls, gatorland, local eateries, etc.)
Or spend the day at Disney Springs.

A character breakfast is something we might do, another day at Storm along bay is nice, Disney Springs, Boardwalk, etc. I don't know how many days you have on your tickets, but if it's four or more, adding a day is so cheap, that I would probably walk over to Epcot. There would be plenty of time before the Tragical Express comes for you at 2:30.
 
We had a car and an 8pm flight so we went to Disney Springs when it opened (check out for us was 10am so it worked perfectly), shopped around - had lunch at T-Rex then headed to the outlets to the Character Warehouse, had a snack at the outlets then made our way to the airport to return the car. It was a nice way to spend the last day. I had considered checking out the Orlando Eye but on the day we arrived it was on the news that people had been stuck for 3+ hours and I could only imagine what would have been going through my mind if it got even close to the time I wanted to leave for the airport and we were stuck so we skipped that potential stress!!!
 
We drive so we can't hang around. We check out by 9am and have breakfast with Stitch at the Poly. Our trips are generally the same time of year, so this is birthday breakfast for youngest child.

And...I need to pay more attention. This wasn't a random question, this was a give me some ideas question.

We are having breakfast at Cape May and then back over to the pool (BW) to enjoy a frozen cocktail before ME picks us up.
 
We are another family that always goes to a park on check out day, but I drive down and I have an AP, my son always has length of stay PHS. If we didn't have tickets, I imagine he would sleep in, we would have a leisurely breakfast in the resort and check out at the last moment. If I were stuck there, I might take that time to do some resort hopping and check out the other resorts, maybe have lunch at one of the monorail resorts.
 
We are considering some resort hopping (AoA to take check out the Cars section for the boys) and Disney Springs.

I don't think anyone answered your question about the pool. Yes, you can use the pool after check-out. Essentially you have full use of everything Disney until midnight on the day of your check-out (including your MagicBands).

But I also agree with the note above that it's very cheap to add an extra day to a park ticket (assuming your current ticket is at least 4 days) and FP+ makes it easy to schedule those last couple hours in the park before coming back to your resort for DME. You can still get up leisurely, enjoy a nice breakfast and then schedule your favorite FP+ from 10am-1pm.
 
We always do a character breakfast at a hotel. I hate wasting valuable morning park time on a character breakfast. You can also swim and go to Disney Springs.
 
We've done both an extra half day in the parks and a relax non park day on our last day with a late flight. The last couple trips, we had EMH at MK on the last night so we were there until about 1 p.m. In those cases, that last day is definitely a relax day rather than be up extra early to pack, get checked in for our flights & hand luggage over before we head to the parks. On our relax days, we slept in, swim, pack & check in for our flights, hang out at Disney Springs for awhile (this is when we generally do any souvenir shopping), and it's tradition to have one last Mickey bar while we wait for the ME to take us to the airport.
 
I too get the latest flight possible- we usually go to Disney Springs, shop, have lunch maybe some ice cream if we have enough time.
