What do grown ups do at Disney :)

I'm sure this has been asked a million times, but with all the changes I can't seem to find anything. So I will ask again.

DH and I are taking our first "kid free" trip for a Star Wars weekend in May. We are only going to Epcot and HS, with a quick stop at DTD on one of the travel days. 3 days total. Any suggestions as to what "adults only" Disney activities, restaurants etc we should get in while we're there? I'm not looking to avoid kids obviously, just thinking things that we couldn't do when the kids are with us that we should take advantage of this trip. This will probably be the only time we go without the kids for a long time, so we want to make the most of it!
 
Ride everything that has a 48" height requirement together. Enjoy a late night in the hot tub. Eat at one or more of the Swan & Dolphin restaurants. Stop at one restaurant at each monorail resort and have a drink and app at each location. Don't stop to meet one single character...NOT 1! Arrive early, do not take a mid day break and stay until at least one park closes.
 
We pretty much have always done the same things, only slower! But with addition of various backstage tours, more upscale restaurants, getting to restaurant early and having drinks at the bar. Walking down Main Street in MK and looking UP at the buildings (we do the same in the other parks). Also taking our time in the mornings and coming back to the room for afternoon naps. (And let me say now that we appreciate FP+, if only for the fact that DD the designated FP runner is no longer available!)
 

Ride what you want to ride, without complaint from the kids. This means I get to watch the fireworks without running commentary about how boring it is. I get to ride It's a Small World and Pooh (I have boys that won't ride these anymore). I can ride Jungle Cruise at night. Drink a little more around the world at Epcot than I normally would. Watch the "stupid" street performers, etc. I also eat at places I am too cheap to take my kids--California Grill, eg. And, I don't have to run to Space Mountain at rope drop, so we can do it a gazillion times before the line gets too long. Smell the flowers along the road of life.
 
Signature Dining. Cocktail Lounges. (bluezoo; Il Mulino; Mizner's and California Grill Bar being my favorites).
 
It's been a few years since we were at a Star Wars weekend (we will be there over Memorial Day), but I had a great time just watching the random characters that were walking around. One thing I would do is slow down and look at the details in the park. DHS has a number of inside jokes sprinkled around if you look carefully.

Watch the street performers at DHS. They are my favorites at WDW.

Maybe go to Raglan Road or House of Blues when in DTD for music or to watch the Irish dancers at Raglan.

Enjoy the casual drink or two (if you do that kind of thing) at Epcot as you visit the World Showcase. There is a wide variety to choose from.

Watch the performers at the various pavilions. My kids don't seem to have the patience to watch them all.

Anything we want! The point is, with no children, you can eat (and drink, LOL), ride, and see whatever you choose. We have no children, but love WDW. Animal Kingdom Park (seeing the animals on Maharaja Jungle Trek and Pangani Forest Trail in particular - I love taking pictures there), and Epcot are probably our favorite non-ride related things to do. If if weren't for ToT, I could do without HS entirely, but I've never been during SWW. We enjoy special activities like the Safaris (Wanyama and others) around AKL, Wine tastings and special events held at resort restaurants, and things like that. We also always schedule at least one special event to watch the fireworks (like a dessert party). It just makes things feel more festive and special, and more relaxed.

Backstage tours; many have a minimum age of 16. Jellyrolls. Tour some resorts (AKL, etc.). Rent a "watermouse" boat. Go get a spa treatment or a manicure. Laze by the pool without having to watch your kids! Sleep in!
 
Book HBD for dessert and drinks before the SWW fireworks if you aren't doing the Feel the Force dessert package. Plan to meet as many SW characters as you like without having to listen to anyone complain. Take trinkets (keychains, pins, small toys) to trade with the Jawas in the tri-state/Streets of America location. The Jawas will search through their bag of goodies to find something appropriate for an adult. We, a group of adults, did this last year and it was so much fun! Adults and families stopped to watch to see what the Jawas would trade with us!

bluezoo lounge for drinks, apps, or maybe even a complete meal. The Boardwalk Inn lounge is also very nice.

Are you staying on property?

We are staying on Property. We are currently booked at Pop because we figured it's only a few days and we can check out a value, but we are considering moving to POR if it's not booked up because we loved it so much our last trip.

I feel silly, what is a Jellyroll? And I didn't even consider a spa treatment, that's genius ;)
 
Jellyrolls is a dueling piano bar over in the Boardwalk area. On our first trip with our kids (in-laws took us all) MIL took us there one evening, while FIL stayed back at the resort while the kiddoes went to bed, so this was a treat for us back then! This was over 12 years ago now, so I can't comment on how it is currently but it was fun then!
 
DH and I have taken four trips over the last four years without the kids--they are both in their 20's now. We love it! Like others have said, you can do what you want, when you want, and don't have to do what you don't want! It's more relaxing and lots of fun! Enjoy it!
 
Drink. Around. The. World.

Husband and I share drinks and snacks as we do laps around the countries - we make it our own mini Food & Wine Fest! I also like the Wine Walk that's done across Italy, France and Germany!
 
What ever you want!! Get up early, eat where you want, take a backstage magic tour (I highly recommend it). Enjoy time with your husband. DH and I have had two non-kid trips to WDW, and it is a totally different experience. We also tried Typhoon Lagoon for the first time back in 201o. We would have spent the time watching/following the kids around, but we could just enjoy ourselves. Have a fantastic trip.
