What DIS'er suggested the "inside-out egg roll?

Cause I want to HUG you! A while ago there was some thread looking for unique dinner ideas and somone on here recommended making an inside-out egg roll. Essentially a bag of cole slaw mix reduced down in a wok with rice wine vinegar, soy sauce, sesame oil, minced garlic, diced chicken and an egg.

We have it at least once a week and it is to die for. I'm eating it right now! We've amended the recipe a bit (adding sweet and sour sauce and serving over white rice), but from one chick who thinks veggies are the root of all evil..

You could actually serve that in a wrap-any type would be good. Or a pita.

Inside-Out Eggroll Casserole
Found on Weight Watcher's Message Board (This is a Core recipe.)

1 bag cole-slaw mix (cabbage, carrots, etc. - or you can chop your own)
1 T canola oil
Soy sauce, to taste
1/2 tsp. garlic powder
1/2 tsp. ginger powder
1/2 tsp. Chinese five-spice powder (or allspice - works just as well)
Salt and pepper to taste
Add-ins of your choice: Cooked tofu or other meat and your choice of canned, drained water chestnuts, snow peas, canned hearts of palm, canned bamboo shoots, etc.

1. Saute slaw mix in canola oil until it cooks down.
2. Add soy sauce and spices; saute a bit longer.
3. Throw in your choice of add-ins. (I added snow peas and chopped canadian bacon.)* Saute until you're happy with consistency; add more soy sauce and salt and pepper to taste. Serve warm!

Yep...that's the one. SO good. And filling.

I made this last night - because it sounded fantastic.

However, I didnt write down what I needed, and figured I'd just look it up on my phone once I was in the store. And then I couldnt get a 3G in the store. :headache:

So - I majorly improvised. I remembered "Cole Slaw Mix" and "Soy Sauce" :laughing:

BUT - mine was good too!

Cole Slaw Mix
Soy Sauce
Pea Pods
Sprouts
Fresh Garlic
Green Onions
Shredded Carrots
2 Eggs
One leftover package of sweet & sour from take out - so like a spoonful.

And the chicken I used - I was a super lazy inside out eggroll maker. I picked up one of those fully cooked, ready to go Chicken Breasts. :thumbsup2

I tried it too when you re-posted it from wherever you found it. It is really good! I used ground turkey (I'm a pescetarian so I made half with turkey and half without any meat) and my whole family really liked it (especially with fried wonton strips on top).

no rice wine vinegar though

and i add some sliced almonds to it :thumbsup2
 
I just made this. It really IS Good! :thumbsup2

I didn't even get to put duck sauce on it, the way I normally eat an egg roll. I was too busy scarfing it down.

Yay! A new way to cook a veggie. :cool1:
 
Made this tonight and it was delish! I added some shrimp and water chestnuts to mine. Then dh suggested we put some of the mixture in warmed flour tortillas and it was even better like that! But, then it wasn't inside out - or an eggroll! :rotfl:

I realized a little while ago that if I also added hoisin sauce to the original recipe and rolled it in tortillas, I could make moo shu chicken or moo shu pork! :cool1:
