Salmon baked on my now antique Chinook plank from the Pacific Northwest… I’m too old to remember where exactly. It was delicious.

Cornbread! (perfect, forever cornbread) Used Trader Joe's Frozen Organic Sweet Corn Kernels. Mixed plain, whole milk Greek Yogurt with Cream to make full fat buttermilk (impossible to find around here). Baked in a small Le Creuset pan. Came out crusty on the outside, moist and tender on the inside -- yum!
My daughter and I made a double chocolate chiffon cake yesterday. You cut off the top, hollow out a trench, and fill with chocolate whipped cream. Then you're supposed to put the top back on and it's supposed to be seamless. Ours wasn't. I'm not sure what happened.
The cake also has very big holes. I have never made (and not sure I've ever eaten) a chiffon cake before, so I'm not sure if that's how it's supposed to be or not. It's pretty tasty though.
My daughter thinks, next time, we should make enough extra whipped cream to use it as icing over the whole cake. That would solve the issue of being able to see the seam... so we might try that next time.
Invest in an enameled paella pan if you don’t have one. They are very affordable, versatile, and last long when you take care of it. They also cook the dish properly either on the grill or stove top. Many local stores sell them and they can also be found online.
