Here is the recipe

GRAND FLORIDIAN
CHOCOLATE CHIP COOKIE RECIPE


2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks butter), softened
1 cup packed brown sugar
3/4 cup powdered sugar
2 eggs
2 teaspoons vanilla extract
12-ounce bag semi-sweet chocolate chips

Preheat oven to 330°F.

Sift flour, baking soda and salt into a large bowl and set aside.
Combine butter, brown sugar and powdered sugar in a separate bowl and cream with electric mixer until fluffy.

With mixer running, add eggs, one at a time, then add vanilla. Mix until combined, scraping sides of bowl.

Slowly add flour mixture, scraping sides of bowl. Stir in chocolate chips.

Scoop 1 tablespoon dough for medium cookies and 2 tablespoons for large onto ungreased baking sheet.

Bake until light golden, 10 to 12 minutes for medium cookies, 12 to 14 minutes for large.

Makes about 3 dozen medium, or 18 large cookies

330 F? Usually I see 350.
 
I can't overstate how much I love my air fryer.
Today I made a roast in it...a roast.what normally takes 6 hours or so in the crock pot took an hour..and it turned out incredible.. the first 15 minutes at 400 to have the herb crust ok top the remaining time at 350... so not sure if this is baking in the purest sense of the word but it was delicious (and low carb when placed atop cauliflower mashed).

Powdered sugar...that is a strange ingredient in a cookie.
 
Since here in Australia , Victoria has gone into COVID lockdown for at least 7 days my son’s sporting weekend was cancelled. Instead the team came to our suburb in NSW so I’ve made an 11lb smoked brisket, 5lb pulled pork, 2lb honey bourbon chicken, 3 dozen muffins, 2 dozen m&m cookies, 2 dozen brookies and 2 dozen choc mint bliss balls. I’ve also declared that I will not be cooking for the rest of the weekend LOL.
 
Variation on KA's Strawberry Marscapone Tea Cake. Didn't have any mascarpone, but did have strawberries which needed to be used up. So skipped the marscapone layer and made the cake in a loaf pan. Added cardamom, nutmeg, and a middle layer of sliced strawberries and spiced sugar. Topped with more sliced strawberries and raw sugar. Whole house smells yummy. :)
Just a heads up when marscapone cheese is a must (does NOT sound like it was for your scrumptious reading cake!) and you’ve none on hand :

How to Make Mascarpone Cheese
To make 16 ounces of mascarpone cheese, begin by fitting a small saucepan with a candy or deep-fry thermometer. Add 2 cups heavy cream to saucepan and warm over low heat. Once the cream reaches 185°F, turn down the heat and add one tablespoon fresh lemon juice. Let the mixture cook at 185°F, watching carefully and adjusting heat to keep it as close to 185°F as possible, 5 minutes. Remove from heat. Set aside for one hour and the mixture will slowly thicken. Line a fine-mesh strainer with a double layer of cheese cloth and set over a large bowl. Pour thickened cream mixture through cheese cloth. Cover loosely with plastic wrap and refrigerate overnight. Discard any liquid in bowl and transfer mascarpone in strainer to an airtight container. Refrigerate until ready to use, up to 3 days.

I'm porch-dropping dinner to a bereaved friend tonight and just threw a lemon-poppy seed cake in the oven now for them. I recently got a set of funky, silicone pans shaped like flowers that I've never used before so I'm really excited to see how it comes out. :goodvibes
