What did you bake today ? OK if not from scratch


I make a vegan black bean peanut butter moist brownies. I am vegan through the week and meat eating on weekends if I feel like it. Best recipe ever and I'm a peanut butter fan and like my brownies fudgy. Been great for weight loss while not starving to death and feeling like I'm ignoring my carnal need for chocolate
 
Here again! Just had to mention a new bar recipe that Everyone Loves, including my fussy grandson:)
It's called a Pnut butter, butterscotch bar. It's made without flour!!! Old fashioned oats and quick oats are used.
Honestly, it is the Best bar I've ever had. It is a big hit with everyone who eats it. Yum......................
 
I made biscuits for breakfast this morning.

I had someone once ask me why I made biscuits from scratch and didn't just use the ones in the can. My answer - those aren't biscuits.
So I do the can ones because every recipe I have ever tried ends up with sort of vaguely buttery paste like bricks and I'm not sure if I'm just unlucky or if this is what a good biscuit is supposed to be. I am open to a tried and true recipe.

Also a general request, hoping for a nice soft gooey cinnamon bun, one that can almost give a joyous cinnamony toothache with a nibble. Most recipes say they have a dry flakey crust like it's a good thing, that is the opposite of what I want so I can't seem to unearth the sort we like, which might have another name.

If you are getting bricks it is likely because the dough has been over worked.

Recipe I use is from an old cookbook I stole from my mom.

2 cups Flour
1 Tbspn Baking Powder
1/4 tsp salt
1/3 cup cold butter
2/3 cups milk

I use a cheese grater to grate the butter and mix it into the flour mixture before I add the milk. The dough should be slightly wet/sticky. Place dough on well floured surface and roll or pat to about 1/2 inch. Cut into biscuits. Bake 10 - 12 minutes in a 450 degree oven. I brush with butter after about 6-8 minutes and continue to bake.

CHEWY BUTTERSCOTCH PNUT BUTTER BARS:

1/2 CUP softened butter ( 1 stick)
1 1/2 Cups creamy pnut butter
3/4 cup granulated sugar
3/4 cup light brown sugar
1 tablespoon vanilla
3 large eggs
2 cups quick Oats
1 1/2 cups Old fashioned Oats
1 teaspoon baking soda
1 cup Mini chocolate chips
1 bag butterscotch chips (12 oz)

Use a large cookie sheet or a large baking sheet (with sides)

In a large bow, mix Butter, Pnut butter, Sugar, Brown Sugar until pale and fluffy

Add Vanilla and Eggs and beat

Add quck oats and OF Oats and Baking Soda. Will be stiff and hard to mix at this stage.
Add Chocolate chips and butterscotch chips
Dump dough onto cookie sheet and spread out evenly. Will be sticky and hard to spread. I used the butter wrapping or waxed paper. Just kind of smoosh it down any way you can. (I couldn't get it too even:)

Because of no flour used, they will appear underdone and slightly gooey. This Is Normal.
Bake for 17 to 20 minutes at 350 degrees. Impt# Let cool for 30 to 45 minutes and cut with pizza cutter. I guess the cooling helps it set up. Keep covered at room temp or can freeze.

PS: It makes alot of bars!!!!
 
I'm going to help my nephew make a cake tomorrow. He comes to my house every day to do his virtual learning and has been asking me to make cookies. I decided that we could use his lunch hour to bake something. He will read the directions and measure everything. He wants to do a scratch cake but we only have an hour so box cake it is. My niece is taking a foods class and needs to send pictures of a food she has decorated. So, he will bake the cake and she will come over after she finishes her classes and frost and decorate it. He really struggles with math so I figure this will reinforce reading fractions, measuring and following directions. The best part is they will each take home 1/3 of the cake to share with their families so I don't end up throwing most of it away!
 
Today I made apple pie. We had lobster and steamers for dinner which traditionally is served with potatoes but we had a bunch of macaroni leftover from yesterday and I needed the room in the fridge so I whipped up a cheese sauce and threw it all in the oven.
 
:sad2: Doh...so close! A friend gave me some of her lovingly-grown zucchini that my family will simply never eat. I can't stand to waste them so I found a great-looking recipe for zucchini coffee cake that I'm going to batch up and give to several people. It will have to be tomorrow now though since I went to the store, got distracted and failed to bring home two specific ingredients I need for the cakes. :o
