American cheeses? One factory makes a pretty good Gouda that Sam's sells.

Mozzarella made from a water buffalo. The absolute best in the world. For maximum quality, no refrigeration. Only lasts 2 days in a bag of milky water. Fantastic!

I love a nice strong English Cheddar.
I love Wensleydale too. I like it with cranberry or a nice piece with ginger.

I rarely ever meet a cheese that I don't like!

The exceptions are Brie....just don't care for it. And colby cheddar....it's ok if mixed into a recipe, but I don't care for it alone.

American cheddars do tend to be pretty mild-
I think Tillamook cheddar is one of the sharpest American cheddars I've tasted- be sure to get the Extra Sharp or Vintage White Cheddar.

My favorite cheeses are Manchego, aged Gouda, Camembert, Cambozola, and Bucheron. I used to work in a cheese dept at a specialty store- heavenly job.
