I LOOOVE cheese.
Favorites: 3, 5 and 7 year aged goudas...so good
Authentic Parmegiano-Reggiano
Soft goat cheese from my farmer's market. I can't remember the name of the cheese, but it is made in Sterling, MA.
Appleknocker cheddar!
Manchengo cheese with that fruit paste--is it guava??
Fondue, made with a mix of gruyere, emmenthaler, and a splash of kirsch
Explorateur--amazingly runny and rich
REAL brie
Cheesy confession: I like to take the fake brie and cut the top of the rind off, then spread with raspberry jam and almonds. Bake at 350 in the wood box it came in (surrounded with foil) until the cheese is melted and you have a totally retro yet amazingly satisfying cheese dip.
