What activities would you NOT miss?

We are taking a Disney Cruise on October 15th and plan to spend a few days at WDW before it. Right now, the plan is that my best friend and I will be going down the Saturday before the cruise with my daughter (who will be 3), her Daughter (also 3) and her Son (who will be 16 months old). Our husbands will be flying in to join us on Tuesday Night.

My question is, what sort of activities will we not want to miss with the 3 year olds. Obviously the 16 month old won't be too into the whole thing, but the girls will!

Also, is there anything that we should wait to do so that the Dads don't miss it? The girls have been to WDW before when they were much smaller (10 and 15 months!) but obviously they don't remember it.
 
Two things come to mind:
~At least one charater meal
~Spectromagic

I'm sure everyone else will have wonderful suggestions, too, but those are the first two that come to mind.
 
At 4, my son's favorite things were Character Meals, swimming, the Honey I Shrunk the Kids playground at MGM, water mouse rides (still a favorite at 16)the pony rides at Fort Wilderness, Dumbo, Tom Sawyer's Island, Universe of Energy, Pirate's of the Caribbean....
 

I'll bet the kids would like Fantasmic. Take the Dads on Test Track.
