What’s for dinner?

Tuesday’s are usually Taco night. But, have a ton of leftovers…hmm…also, my Navy son is back home after being deployed 4 years. He’s skinny!!!! He’s gotten used to not eating much based on being out to sea and working all the time. I’m trying to get him to eat!!!
 
Soft tacos. Haven't had them in ages

Added the end of a jar of salsa to ground beef and taco seasoning. Rolled in a soft taco shell with lettuce 2 kinds of cheese sour cream and fritos!

Chicken potstickers, stir fried rice & steamed vegetables.

I still have a ton of sauce and meatballs left, since only my youngest ate some last night.

So, tonight will be some kind of pasta bake, broccoli, cottage cheese. The rest of the sauce will get frozen for later. Have at least half a gallon left, ha!
 
Tuesdays are soft tacos night at our house. Our standard is diced tomatoes, sliced black olives, chopped onion, lime wedges, shredded cheese, cilantro, shredded lettuce, sour cream, taco sauce and sometimes avocado....and the meat of course!!! I make cheese quesadillas for the little ones.

Just got back from the movies with the grandkids (Paw Patrol) and filled up on candy and popcorn so no appetite for dinner yet but I did make a yummy Tortilla Soup that I can heat up later if I get hungry.
 
I made a chicken noodle casserole with a crispy Panko topping and a big pot of chili. Both dh and dd take leftovers for lunch everyday and I won’t be home tomorrow for dinner so this way I have both lunch and dinner covered.
 
Got some Asian fusion takeout. I had a shrimp roll, a spicy tuna roll, and seaweed salad. Partner had sesame chicken and crab rangoon.

Last night I cooked penne and veggies.
 
Leftover grilled chicken that we put on salads. It was good and I have enough for my lunch tomorrow. Need to come up with something for tomorrow’s dinner. I cleaned out the freezer today and it is definitely time for a trip to the butcher and a big Costco trip.
 
I could totally go for that now.
I'd recommend getting it somewhere other than where we got ours from! The sushi was pretty average, with bland rice, and the seaweed salad tasted like it had been pre-bought from the freezer section. The good thing about average sushi, though, is that it puts me in the mood for awesome sushi! So probably some time next week!
 
so we buy a lot of kroger half price toppings and red net veggies.......so wife sautéed some chicken bits and we blended it on our tortillas with avocado sauce, SW border bean sauce, organic lettuce and border sour cream, real mexico sour cream.

Hahahaha....Oh, he's happy to be getting Mama's cooking....it's just a transition for him...he's been deployed outside of the US for 4 years and the majority of that time out to sea, working 'round the clock...little time to eat. Anyway, I'm trying to fatten him up...he came home super skinny!
