Edit-- And tonight (one night later): stir fried broccoli with oyster sauce, fried rice, orange chicken. DD28 is home for a visit and requested Chinese food.

We went out to a quirky Tex-Mex place in Winston-Salem (with ample shaded outdoor seating). I just had portobello mushroom tostadas, very good but nothing unusual, and my partner started with chips and queso. But my starter and her entree are where the creativity were hiding:

Avocado fries: wedges of avocado, fried on the outside. The avocado inside was all soft and smooth and silky, and it came with a tasty cilantro ranch.

Dr. Pepper Trailer Pot Pie: "tots, cheese, and Dr. Pepper BBQ beef baked in a mini skillet; served with flour or corn tortillas, lettuce, sour cream, guacamole, and jalapeños."
 
First day of high school for my BABY and he was quite nervous, so I told him I would have his favorite meal for him at the end of the day.

So, after my next meeting, I am going to go roll the meatballs and start on the sauce. Let it simmer all day.

Nothing satisfies that kid as much as massive plate of spaghetti and meatballs...will have fresh green beans and garlic toast, too.
 
My youngest turned 15 today. She started high school last week and has a ton of homework every night as well as a 2 hour volleyball practice. We usually go out to dinner for birthdays but she requested her favorite meal which is a cheesy hash brown casserole with ham. I also served fruit and biscuits and we had brownie sundaes for dessert. We may do a dinner out over the weekend.

Crockpot Split Pea Soup with Andouille Sausage

I am making split pea soup today too! Mine is in the crock pot. If it is done in time I may eat it for dinner, the rest of my family doesn’t really like it so I am mainly making it to freeze for lunches for me. We have leftover chicken from Sunday and leftover ham hash brown casserole from yesterday so those are also options.
