What’s for Dinner Tonight?


Busy day that had me fall into bed soon after returning home.

Got everything I needed except a new foot pedal and self healing cutting board. Which of course means I won’t be sewing anytime soon. Grr.

D. put some chicken tortilla soup in a pot for me to heat up before she left. In order to not be “fussed over” tomorrow I ate it after midnight in a better late than never manner.
 
Chicken broccoli penne in garlic and olive oil. I cook the broccoli soft, to where it breaks apart, fry up chicken breast pieces in olive oil and fresh chopped garlic, cook some penne, then mix it all together with a bit of butter. French baguette on the side to mop up the buttery garlicky oil.

Then Thursday night will be leftover vegetable beef soup - Friday night will be Enzo's Hideaway, Saturday is Steakhouse 71, Sunday is San Angel Inn, and Monday is Yak N Yeti, as I'll be back at Disney letting someone else do the cooking.
 
It was delightful out today! It was 33. I ran to target at lunch because it was the first day above freezing in 2 weeks. It drops back below freezing tomorrow and with the wind chill this weekend the local weather people are saying it will feel like -30. 🥶

Taco Tuesday! DH had ground beef and I had black bean with Spanish rice.
Isn't it great when the temp goes above freezing?

Supper tonight is a rotisserie chicken from Sam's, potatoes au gratin, and salad.

Got a nice chunk of chores under control. Spoke with a plumber I worked with before retiring and he promises to talk me through changing the faucet’s cartridge once the part arrives; he’s retired now too and living down South. Got the building handyman to replace the chest freezer’s panel light. Ordered the foot pedal online but still searching for the cutting board.
Still didn’t work on planning the Asian New Year menu but think I can accomplish that before the weekend.

Tonight was a portion of lamb and veggie biryani and a cup of chicken broth with kale and lemon. Ate some vanilla gelato w/ a clementine for dessert.
