I’m roasting a diced sweet potato to make a Mediterranean bowl with lemon chicken, farro & tzatziki sauce. Might toss in a handful of power greens as well,
I made a sweet potato topped shepherd's pie. It was okay. Could've used a bit more seasoning. Having the leftovers tomorrow. Might need to spruce it up a bit.
Busy day that had me fall into bed soon after returning home.
Got everything I needed except a new foot pedal and self healing cutting board. Which of course means I won’t be sewing anytime soon. Grr.
D. put some chicken tortilla soup in a pot for me to heat up before she left. In order to not be “fussed over” tomorrow I ate it after midnight in a better late than never manner.
Chicken broccoli penne in garlic and olive oil. I cook the broccoli soft, to where it breaks apart, fry up chicken breast pieces in olive oil and fresh chopped garlic, cook some penne, then mix it all together with a bit of butter. French baguette on the side to mop up the buttery garlicky oil.
Then Thursday night will be leftover vegetable beef soup - Friday night will be Enzo's Hideaway, Saturday is Steakhouse 71, Sunday is San Angel Inn, and Monday is Yak N Yeti, as I'll be back at Disney letting someone else do the cooking.
It's YOYO night at our house. Not really sure as we don't have much in the way of protein left in the fridge/cabinet. Plus, I'm taking a client to lunch tomorrow. So I won't need leftovers. Not really sure what I'm going to do at this point.
It was delightful out today! It was 33. I ran to target at lunch because it was the first day above freezing in 2 weeks. It drops back below freezing tomorrow and with the wind chill this weekend the local weather people are saying it will feel like -30.
Taco Tuesday! DH had ground beef and I had black bean with Spanish rice.
I have been trying to not get take out when I have a crazy day by meal planning and having some easy in house options. Today I tried an adobo chicken kit I got at Whole Foods. I made rice and green beans to go with it. It wasn’t bad.
It is delightful!!! I don’t like winter, but these arctic temps this year are just brutal!
The last 3 days have been freezing or above. Tomorrow will be 30 but I’ll take it, bc the arctic air is back this weekend.
I hope this ends soon.
