What’s for Dinner Tonight?

Last night we went out for Mexican. I had fajita quesadillas with a cucumber marg and DH had shrimp, chicken and steak fajitas and a Dos Equis

Last night I made another recipe from the Skinnytaste High Protein cookbook, Shortcut Turkey Meatball Minestrone Soup. It too was very involved like the Mexican Beef soup (despite being labeled "shortcut"). It took over an hour and came out just okay. So far I'm not as impressed with this cookbook as her previous ones. Everything I've made is very time consuming and just tastes okay when I'm done. Definitely not worth the effort they take. Usually her stuff is fairly simple and really delicious. We're having leftover soup tonight.

No! I was really tired and didn’t feel like going far. I think we also would’ve needed a ressie.
Funny that you got a gift certificate from there!!! Was it before or after I mentioned it?
If you go on the weekend I would make a ressie.

It was after. I got a gift certificate good at a bunch of New Bedford restaurants and that one is included. I was excited to see it on the list after reading your post.

We flew into PWM at 11pm yesterday so stayed overnight. Woke up to SNOW today so we hustled out of the hotel to stay ahead of it. It took 3 hours to make the 2 hour drive and we saw a dozen vehicles off the road (in 3 separate accident areas) but we are home safe and sound. We've been gone 12 days so of course there isn't much food here and I'm not excited about going back out in the snow (predicting about 5"... welcome back to Maine, i guess) so I rummaged thru the freezer. I put some chicken carcasses and veg trimmings on to simmer for the start of a chicken soup (or something) for tomorrow. I then thawed out a quart of chicken tortilla soup from Sam's, doctored it up with cumin, garlic, roasted corn, and black beans, and then served it with cheese, crushed tortilla chips, and dollops of sour cream. A big bowl really hit the spot on this cold afternoon, especially after living on airport food yesterday. While I wish we were still at Disney, it's also good to be home!

last night: frittata with potatoes, peppers, onions, cherry tomato, and spinach served with a a three layer bean dip and chips

tonight: baked scallops with mashed potato and butternut squash

I don't cook on the weekends. Tonight we'll probably order in from Panda Express.

I made black bean, corn, and jalapeño quesadillas for lunch and neither of us are hungry enough for a big dinner. I made focaccia bread to have with dinner so I pulled broccoli cheddar soup out of the freezer and we’ll have that with the focaccia.

This was a box mix from King Arthur. Smelled delicious when baking. Hoping it’s good.

No more leftovers or freezer diving tonight. Going out to a local golf course that serves great bbq. Heading out tomorrow for the Gulf Shores! ️

We are having homemade Cheeseburger Spring Rolls in honor of booking our summer trip to WDW and some various fries/onion rings to clean up our kitchen freezer.

We finished our short stay at the French restaurant that we always set aside a night to visit, when we're in that town. We shared Foie Gras Club (Seared Hudson Valley Foie Gras, Tomato Apple Jam, Crisp Smoked Bacon on Grilled House Brioche), The Perfect Caper Pate (All-Natural Chicken Liver Pâté, Mission Fig-Vidalia Onion Relish, Rustic Pear Jam, Crostini, Caper Berries) & Pappardelle & Mushroom (Imported Pappardelle, Hen of The Woods Mushrooms, ProsciuttoCrisps, Kale, Light Cream, Parmesan Cheese).

Once again, DH's eyes were bigger than our stomachs. We only ate a few bites of the pasta, then had it packed up to go. We'll be eating that with a salad at home tonight. DH will also have a roll.

The family is going out for lunch today......my birthday family time and then back to the house for cake.
So.....dinner will be the rest of the things that need to be cleaned out of the refrigerator.......salad and some eggs. I know DH will want Chilaquiles. I'll probably make an omelet.

Thank you! we actually have a house in that neck of the woods. My husband would like to spend more time there (left coaster) but I’m a west coast girl so I’m working on splitting time!
