What’s for Dinner Tonight?


Not sure what's for dinner tonight. We usually would go out on Friday or Saturday night, but we're trying to stop going out as much (NY's resolution). So I'm thinking we're going to stay in. Just don't know what we're going to do. Might have leftover ham and cornbread from last night (along with mac & cheese and a vegetable). Or might cook something else. Just not really sure yet.
 
No lunch. We went down to one of our local harbors, we both thought we were going to eat down there, but that didn’t happen. So, we’re doing pickup from a local Mediterranean place tonight. I don’t feel like cobbling something together from our leftovers. And my hubby certainly won’t do that. 🤣

We are in Manhattan tonight, staying at Margaritaville Resort. We went to happy hour at Havana Central and had bevs and some tasty tacos, and then say "All Out." We had supper at the hotel restaurant, which was decent but not exciting; DD and I both had burgers. They were good, nice quality meat that wasn't too greasy. We had planned on going out for dinner but realized we've been up since 4am and were TIRED, so easy and quick was the solution to tonight's supper.

Received an order from Stew Leonard’s today and one of the delivery items was globe artichokes which were on sale.
Not my favorite variety but the price was excellent so I bought a few and made a spinach- artichoke dip w/ chicken soup.
The recipe called for marinated hearts but I saw no reason not to use fresh from a taste POV. I’m sure my change took more time to cook though. Since I’ll freeze some of the soup won’t add the cream cheese until it’s time to reheat.
Will make again but next time I’ll use a rotisserie chicken to cut back on time. BJ’s still sells them for $5.00 which must be a true loss leader for them.
 
My mom gave my bff and I GCs for Christmas for the same restaurant. It’s a new restaurant that opened this fall. We went today for a late lunch. Everything was delicious!

I had a limoncello mule, we split the stuffed mushrooms, calamari, and crustini with fig, burrata, and balsamic. For my meal I had chicken Francese but had them hold the pasta and had it over spinach. Everyone was too full for dessert.
