Had some prime rib left from Christmas so cut it into strips and made a pho with lots of veggies and noodles.

The city turned off the Christmas lights on the tree they erected across from a nearby courthouse. Normally, they wait until the Day of Three Kings but maybe they changed the schedule .

This is the last night cooking for DS for awhile. We're having pulled pork sliders, with cole slaw & potato salad.

Not sure what's for dinner tonight. We usually would go out on Friday or Saturday night, but we're trying to stop going out as much (NY's resolution). So I'm thinking we're going to stay in. Just don't know what we're going to do. Might have leftover ham and cornbread from last night (along with mac & cheese and a vegetable). Or might cook something else. Just not really sure yet.
