What’s for Dinner Tonight?

Wednesday night ended up being spaghetti with meat sauce.

Thursday DH and I went out for Thai food. We work from about 10am to 8:30pm-ish on Thursdays so I don't usually cook. We each had an old fashioned, then shared an appetizer order of steamed chicken dumplings and a dinner serving of pad see ew with tofu. We brought home the leftovers.. and I was so tired, I couldn't even finish my drink.

Friday night, DD/SIL/LG came for dinner. I made a chili-mac casserole with melted cheese on top from the leftover chili I made on Tuesday. Served with salad and crusty bread. It was pretty good... and there is a lot left over.

Tonight... scallops are on sale for $17 a pound so I bought about 3/4 of a pound. I think I'll do a ritz cracker crumb coating with lemon butter on the scallops, mashed parsnips, and some sort of pasta with garlic butter/sauce. Maybe salad, too... there's leftovers from last night.

Today I also made corn chowder, which will be for tomorrow night, with BLTs (bacon is already cooked). I have a production meeting and Nutcracker rehearsals from noon-6 tomorrow, so I like to have something prepared so that dinner is quick, as it's usually close to 7 by the time I drop off DD and get home.

We are not hosting thanksgiving so I started the inside decorating today. I also put up the new curtain rod since painting is done and hung the new curtains and rehung my grandmother’s mirror over the fireplace mantel.

I’m feeling tired so we grabbed Chinese takeout. I got shrimp fried rice.

DH is still having the above.
I am still full from a popcorn lunch and it is raining, cool. thunder storming day, so I am having some chicken noodle soup

tonight was a beef stew with a rosemary sourdough bread

also tried my hand at making a flan with caramel topping, will need to up the recipe or use a smaller pan as it was a bit thin but still tasty

My daughter is trying to finish up.the last of her merit badges to earn her Eagle Scout rank, so she cooked tonight. Sweet and spicy broiled shrimp with green beans and bell peppers, Hawaiian rolls, string cheese (had to have dairy in there for the badge, but she can't eat it, so we cheated a bit), apple slices with vegan caramel sauce and caramel sticky buns for dessert (we had lots of caramel sauce.

We went to the Commonman in Lincoln NH. I had a delicious Asian bowl with salmon and DH had a Mexican streetcorn bowl with chicken.

We had what my boyfriend calls Hawaiian plate lunch. It consisted of teriyaki chicken thighs, macaroni salad, and jasmine rice.

Tonight is herbed pork chops with horseradish sauce, baked potato and green salad. Maybe through in another veggie.

Last night we went out. I had scrod florentine- scrod baked on a cream sauce with spinach and Parmesan. DH had surf & turf with a ribeye and shrimp.

I went to a winter farmers market today that was fantastic! Tomorrow I’m going to have pasta with fresh pasta I bought at the farmers market.

Tonight we had one pot chicken and rice with peas.

DS-27 was home to watch the Pats game with us so we had his favorite crumb coated chicken thighs, asparagus and acorn squash.

Just some crispy chicken, rice and vegetables. I was going to have a nice buffet lunch… until a verbal conflict resulted in that being cancelled.
