Wednesday night ended up being spaghetti with meat sauce.
Thursday DH and I went out for Thai food. We work from about 10am to 8:30pm-ish on Thursdays so I don't usually cook. We each had an old fashioned, then shared an appetizer order of steamed chicken dumplings and a dinner serving of pad see ew with tofu. We brought home the leftovers.. and I was so tired, I couldn't even finish my drink.
Friday night, DD/SIL/LG came for dinner. I made a chili-mac casserole with melted cheese on top from the leftover chili I made on Tuesday. Served with salad and crusty bread. It was pretty good... and there is a lot left over.
Tonight... scallops are on sale for $17 a pound so I bought about 3/4 of a pound. I think I'll do a ritz cracker crumb coating with lemon butter on the scallops, mashed parsnips, and some sort of pasta with garlic butter/sauce. Maybe salad, too... there's leftovers from last night.
Today I also made corn chowder, which will be for tomorrow night, with BLTs (bacon is already cooked). I have a production meeting and Nutcracker rehearsals from noon-6 tomorrow, so I like to have something prepared so that dinner is quick, as it's usually close to 7 by the time I drop off DD and get home.
