What’s for Dinner Tonight?

I am sooooo far behind in this thread!
Tonight was leftovers. DH is away for the week (left today for a training session outside of Boston) so I'm on my own. I had a chicken thigh from Thursday's leftover rotisserie chicken and a little bit of leftover Stouffers mac-and-cheese from last night. Also last night's leftover salad. Not sure what the rest of the week will bring, except for Friday. We're having Chinese takeout (unless we do Thai instead). DH will be home, DD, SIL and the Little Guy will be here for supper. I want quick and easy, with minimal clean up, as shortly after supper everyone will tuck DD and me into bed early, as we have to be up by 4am to be at the airport by 5am on Saturday for our flight to DISNEY WORLD!

Last night was homemade turkey burger meatballs which we made into meatball subs, and we had tater tots to go with.

Well about 3 hours after dinner, both of us got violently ill. Don't know if it was food poisoning or if one or both of us finally caught the stomach bug that's been going around in our school districts. :sick:

So tonight was simple chicken with mashed potatoes.
 
We shared a half dozen Maine oysters, another bowl of lobster bisque & Maine crab cakes w/ wild rice & asparagus. We couldn't leave Maine without trying a blueberry dessert, so we finished the meal with a blueberry crisp w/vanilla ice cream.

After we had ordered, DH reminded me our next stop is in Maryland. 🤦‍♀️ We've already had crab cakes 2 nights out of three, but I foresee more crab cakes in our future.

Yesterday was farmers market day but since I’m trying to eat down my freezer a bit just bought exactly two tomatoes. And thennn I grabbed a commuter train into Manhattan with my home attendant grumbling about running the streets; she should know better by now, lol.
Fortunately by the time we reached Grand Central Station she’d gotten over herself with the help of a Starbucks drink and the cup holder I gave her to keep it easy.

Did the usual shop til you drop return and then dropped into a nearby Thai restaurant for a bowl of tom kha kai soup. What was needed as I’d been wanting some for months.
