What’s for Dinner Tonight?


Busy day.
Started with a visit to the farmers’ market that’s become a spot fraught with no nos, 🤣. Trying to empty the fridge out and remembering that the freezer is almost full can be hard on a grrl.
Walked away from the fresh tomatoes ( down to $1.50/lb!) and the ready for their close up leeks - don’t you worry my sweets. You’ll still be around when I return, lol.
Yes but I did buy some escarole for immediate use and my fruit guy didn’t come today so after a walk in the park, back to the house to get the stove working.

Finally finished fever dreaming about last week’s Italian products and used up all the fresh goods. Dry sautéed and chopped the escarole. Added it to a ricotta, burrata and marscapone mixture and wooshed it all together in the Cuisinart. Perfect for stuffing in shells which is what I did.

Most was flash frozen but a few were put in a small casserole dish lined with sausage ragu and baked for dinner. Finished off the garlic soup as a starter.
 
Tonight will be the third and final night of the pork and eggs. A 7lb bone in pork shoulder is just a lot of meat. Although its a favorite, even my son asked last night.... "why so much?" :scared:


That now leaves chicken kabobs for Thursday night, then splurging both Friday and Saturday night for our Anniversary.
