What’s for Dinner Tonight?

Marinated a pork chop (the last defrosted one) in green curry paste and ginger for a few hours and then roasted in the toaster oven. Serving it with a mango, Granny Smith apple and cuke salad with a side of vinegar dressed carrot slaw. A glass of seltzer and lime ought to be fine for a drink.

We decided to stay in & rest up for the long drive tomorrow & Friday. Dinner was room service from Shula's again. DH had a burger w/ fries. After the past few days, comfort food was all I could think of that I wanted. That ended up being macaroni & cheese & buttered bread.
