What’s for Dinner Tonight?

Last night DH smoked a pork shoulder. It was perfect! We had rolls for those who wanted sandwiches. He made three sauces. A Sweet & Tangy sauce, an Eastern Carolina sauce (vinegar based and my fave on pork) and a Carolina Gold sauce (mustard based.) We had potato salad, coleslaw and pasta salad with it.

Tonight we’ll have chicken divan, one of dd’s faves, for before she heads back to college.

No shacks this weekend. We went to another friends pool today. I made a veggie platter and coleslaw. My friends husband smoked a pork shoulder. We also had green salad, pasta salad, a beautiful cheese board, shrimp cocktail, and bruschetta.

My friends that go to the shacks with us was there today so we were tossing out options for next weekend.

Our grocery shopper (DH) was having ankle problems again today. That was as good of an excuse as any for him to order pizza again. This time we ordered cauliflower crust & split the toppings (1/2 sausage Magnifico & 1/2 sliced tomatoes w/ mushrooms), so I could eat some too. We also ordered a garden salad in case I decided the pizza was a bad idea.

Yesterday I spent the day in Connecticut at a pool party/BBQ with all my maternal side's first cousins, their spouses and kids (and a few grandkids as well). It was so much fun! We haven't all been together since pre-Covid. I had various salads and chicken thighs.

Tonight I made BBQ country ribs with yellow zucchini and a cucumber tomato salad from our garden.

Sounds like lots of fun! Where in CT? I’m in the Hartford area.

I'm picking the grand kids up after school all week. DIL is out of town.
So cooking dinner for them too.

Tonight will be Tamale Pie, green salad and some kind of vegetable they will eat.

Last night reality sunk in and we began packing in anticipation of today’s good bye. Finished in record time (I’ve had packing down to a science for a while and Denisa is not too shabby either) so we made a fridge leftover clean out salad.

Since we were still hungry strolled over to the lounge at Il Mulino and noshed on some mussels and shrimp cocktail. Finally, as time still remained, rode the Friendship boat to the IG. While Denisa secured space on the bridge for viewing Luminousity I went to France and purchased two alcoholic slushies that I poured into a thermos so we could pour them back into the glasses on the bridge. This ECV makes extra steps sometimes.

We are now at MCO waiting for our flight: bye WDW!
