Just thought I would share this recipe for kielbasa:
POLYNESIAN SAUSAGE
1 lb. kielbasa or other similar sausage
1/3 cup barbecue sauce
2 T. orange marmalade
2 tsp. red wine vinegar
½ of a medium onion, chopped
½ of a green pepper, chopped
1 can pineapple chunks in juice, drained (save the juice)
Slice sausage into thin rings and sauté in a skillet for 10-15 minutes.
Mix together the remaining ingredients and add to the sausage, along with approximately one-half of the reserved pineapple juice.
Lower heat and simmer for 45 minutes.
Serve over cooked rice.
It was too hot to cook today (99 degrees, feels like 115) so I had a ham and Swiss sandwich with some jalapeño kettle chips and a big glass of iced water.
It’s me and My Precious tonight: lamb chops! Honestly, I could eat them every night, lol. Oven roasted, dipped in dukkah then drizzled with pomegranate molasses. Served with carrots, celery and watermelon. No dessert since already had it with dinner
Spicy Shrimp Casserole .....one of our favorite dishes.
Green salad with it.
I need to get some apples in the dehydrator and get my cucumbers in salad mixture. I've been waiting too long. I've been caught up in drawer cleaning in my office/craft room

Last night I had pierogies and kielbasa. DS had some when he got home too!
Tonight I’m going out with some friends for dinner at a restaurant on the water. So I image I will have some kind of seafood tonight and a couple of spicy watermelon margs!!!
We try to eat salmon a couple times a week to get those omegas so it's a salmon night tonight. We've tried it a bunch of ways but our favorite is "sensational spiced salmon" from Taste of Home so that's probably how I will cook it tonight. Not sure about sides. Probably roasted broccoli and maybe a baked potato. We don't eat potato often but I've been craving a baked one.

Dh made ribs last night with his homemade sweet ‘n tangy bbq sauce. He cooks the dry rubbed ribs in the slow cooker and then finishes them off on the grill after basting. We had roasted potatoes, corn and watermelon with it.
Tonight, grilled hot dogs and homemade hamburgers with homemade fries and green beans and probably the leftover watermelon.
Tonight we are having grilled shrimp over Cesar salad with garlic bread. I made blueberry muffins earlier, my dad stopped by and took some muffins and cucumbers. I picked 34 cucumbers today, it is madness!
We have a bunch of leftover veg and about 3/4 of a rotisserie chicken in the fridge, so I'm going to do something with them. Stir fry? Cacciatore? Not sure, but supper is based on chicken, red, green, and yellow peppers, onions, swiss chard, mushrooms, baby tomatoes.
