What’s for Dinner Tonight?

MIL's house for dinner tonight for my Bday. She made a really good Chicken Parm casserole, medium size shells, cut up chicken sauce, cheese. It was yummy. Then a Chocolate bundt cake that was good, there was half left and we took it home so we'll have cake for a couple days.

I'm back on my meal subscription plan so out of this week's box tonight we had a really delicious shrimp and charred corn salad with homemade bacon bits and croutons (I used the bacon drippings to pan toast the croutons) and a lemon-buttermilk dressing. :lovestruc For dessert, I picked up some dark chocolate-dipped pistachio ice cream bars. They were not great. I'm sorry I wasted the calories.

Now that I'm back to using my computer, I'll try to get caught up. I'll break it up into two posts, because I can get wordy at times. :o I think I left off last Thursday night.

Spoiler alert: The weekend was an epic fail for my diet. :sad2:

Friday, we discover the town we were in had a dueling pianos venue, so we planned our evening around that. On the walk to the venue, we passed by a Wolfgang Puck restaurant. We didn't have dinner plans, so we decided to give it a try. For our app, we shared lettuce wraps. Our entree was half chicken w/ rosemary jus, potato purée & farm market vegetables at the suggestion of our server. Unfortunately, for my diet, we didn't stop there. I noticed a chocolate soufflé w/ caramel ice cream on the dessert menu. That was impossible to resist. We had a glass of 30 year tawny port to enjoy, with the dessert.

Saturday evening, we came back from a day of touring in a different town (Holland, MI) & left the hotel wandering aimlessly. After walking through the downtown area looking for food &/or entertainment that caught our eye, we decided that dueling pianos once again sounded like most fun choice. That led me to Google looking for a restaurant in the area with good reviews. Nothing really caught our eye, so we decided to go back to the same restaurant we had eaten at the night before. Our original plan was to order Halibut the first night, before we were talked out of it. The second time we were determined to order it. (I'm sure you can guess where this is going.)

We started with a mushroom bruschetta app. At the last minute, we chose the Shanghai Noodles entree (wok-fried pork, wheat noodles, stir-fried vegetables & cilantro), instead of the halibut. We'd never tried this dish & are always looking for something new. Somehow, I convinced myself that the ingredients as a whole weren't that bad for me. :rolleyes1 Not the best choice. Needless to say, I wasn't even tempted to order dessert, after totally blowing it with the entree. Now, we need to return to Grand Rapids, MI to order the halibut. :p

Sunday we were traveling. By the time we got to the hotel, it was pouring rain. The hotel restaurant happened to be one of our favorite types of cuisine (Japanese), so we ordered take-out for the room. Sashimi, sushi roll & what they called a Dinosaur egg (Spicy crabmeat, tuna, and yellowtail inside ball shape avocado wrap with crunch and tobiko.) The Dinosaur egg was excellent.

Monday, we arrived at DS's house for a visit. He ordered steak & scallops habachi. DH & I shared grilled vegetable hibachi in an attempt to make up for my terrible choices over the weekend. He ate most of the rice.

Tuesday, DH had a brisket sandwich, fries & hush puppies. DS had a brisket platter w/ fried okra, potato salad & hush puppies. I had a Cobb salad w/ turkey breast minus the bacon.

Last night we finally cooked. Burgers (beef for the guys, turkey for me) & cucumber, tomato salad.

Tonight, pork tenderloin, roasted sweet potatoes & leftover cucumber, tomato salad.

Tonight’s plan was grilled shrimp over salad but DH called to say he picked tomatoes. I then stopped at a farmers market on my home and got fresh mozzarella, pesto, and sesame semolina bread. So I’m making open faced tomato sandwiches with the mozzarella and pesto! First tomatoes of the year! Come mid august I won’t be this excited

Korean meatballs, stir fried broccoli + carrots with rice noodles will be dinner tonight.
A bit heavy for my idea of a summer meal but right up DGD’s alley.
I’ll forgo the noodles for a cup of cream of broccoli soup.

There are fresh peaches and apricots plus a variety of gelatos available for dessert. Guess we will know what to have later.

Yesterday was leftover Hot dogs and Ancini de Pepe fruit salad from Sunday.

Today DH and I are going to dinner for my Birthday. We don't want to venture too far because DH has to work early in the AM so Olive Garden it is! I like it there, plus I am having a craving for their Chicken and Gnocchi soup. I'll probably order an extra bowl to take home.

Tomorrow we are going to my MIL's house for dinner to celebrate my Birthday with her and my SIL and BIL and maybe our nephews. Then there is a free concert in the park that we will likely go to. They are usually a nice night out.
Happy Belated Birthday! :bday:
