What’s for Dinner Tonight?

We spent the past three days driving. Our meals were less than exciting to stay the least.

Friday - After our first long day of driving, we arrived at the hotel late. We drove around in an attempt to find something I could eat, but gave up. We were too tired to put the effort into it. I decided to make turkey wraps in the room.

Saturday - We had a late lunch. Dinner was a shared Ahi Tuna bowl at our hotel for the night.

Sunday - We finally arrived at our home for the week last night. After the third day of driving, we decided we didn't even want to attempt to find an open restaurant. So, we stopped at Walmart & picked up shrimp cocktail & crudites. I added some hummus I already had & that was our late dinner.
 
I’m breaking down and having spaghetti and meatballs tonight. I have nothing else and I guess it’s better than takeout.

Because I’m still on vacation until Monday. I made strawberry ice cream this afternoon. My dairy delivery comes on Friday and this week they also had strawberries. 🍓

After looking at your review, I see I misspoke about the port. When you mentioned the ship you were sailing on, I Googled to see where it sails from. Miami came up first. That's the port I was referring to. Sorry, about that.

Last night started my hubby’s 60th bday extravaganza! A bunch of friends came into town. We grilled steaks and chicken on the deck with salad and garlic bread. Dessert was carrot cake and key lime pie.

Today is the big day, so we’re catering in from one of our fave BBQ places and a large charcuterie from wine works. I still need to get him a cake!

It always takes a bit more time to finish off a roasted chicky since I’ve become a solo.
This morning I looked at all the meat left and got busy: made a curried chicken salad and an amazingly easy ginger, rice and lemon chicken soup with the rest.
The soup can be made from scratch or just use up leftovers from the fridge/freezer. I’ll add soft veggies like baby spinach or lettuce to the soup when heating it up.

Decided to add some frozen peas to the chicky salad; it’s become a “thing” with me and I’ll stop when something else catches my attention (…squirrel!..😂).

Tonight it was the chicken curry salad on romaine lettuce leaves. Makes a good wrap.
