What’s for Dinner Tonight?

I totally blew my diet tonight. DH & I shared Chicken foie gras and pistachio rillette appetizer & Pan roasted halibut entree. He also wanted dessert. He chose carrot cake & ordered 2 glasses of dessert wine. I had the wine & a few bites of cake.

It’s been a constantly cloudy and rainy start to the summer so I’ve been spending a bit of time perusing recipes with the idea of fine tuning my weekly menus. Right now berries and cherries are in season so trying to incorporate them into my entrees as well as desserts. Today, going to try making a cold cherry soup with a mixture of sour and Bing cherries bought at the farmers’ market. Could be a nice starter for grilled entrees.

Last night I had a bowl of the ginger, chicky and rice soup. Worthy and a great way to use up leftovers.

This was our first time trying chicken foie gras also. We didn't even know it existed, until last night. The consistency was different from typical foie gras. It was dryer & didn't spread as well. It tasted similar to chicken breast, but it was full of flavor. That was preferable to me at this time. I could attempt to convince myself that it wasn't quite as bad for me. Definitely, give it a try, if you see it on a menu.
