What’s for Dinner Tonight?

Thursday night I made BLTs and corn chowder. DD/SIL/8yo came for dinner and then the little guy stayed overnight; we took him to school on Friday. I think this will become a weekly thing.

Yesterday afternoon we got bad medical information about my brother in law. My focus was shot even though I had to teach all afternoon and was in no mood to cook and clean. We left work at 7pm and went directly to our favorite Thai restaurant for a bev or two and supper.

Today I am going to my 'other' sister's home until Tuesday. Tonight we'll have lobster rolls. Lobbies are down to $9 a pound so IF they don't run out of lobsters before she gets out of work, we'll be enjoying a lobster roll tonight!

Family lunch is over.....so dinner is leftovers again.
I will have chicken sandwich and a salad, DH will have Quesadilla casserole and salad.

Wednesday the grand kids arrive while their parents so on vacation.
DGD will stay here all the time. Maybe I can get her to practice cooking dinner.
DGS had sports camp, so me driving back and forth for a couple days.

We made the best of it and although it was still a great day yesterday, it didn’t rain as much as predicted. We had hot dogs, brats and O’Brien potatoes. My son told a couple of his friends that we’d be camping and they came out to fish with him. (They both grabbed sticks off the ground and heated up some dogs over the fire. 😂)

This morning I made blueberry pancakes, chocolate chip pancakes and bacon, egg and cheese sandwiches to order. (But we did have to drive back home (about 25 min away) to get our second Coleman stove in the middle of breakfast. The one I had completely died on me!)

Tonight we had the leftover smoked chicken that dh made last week. I froze it with camping chicken sandwiches in mind. We also brought some homemade bbq sauces that dh made. Chicken Rice-a-roni as a side.

Dd flies to Chicago tomorrow morning. We’ll have to leave at 3am to get to the airport for her 6am flight. 😩 She and I will head back to the house for the night and I’ll come back to the campground after I drop her off.

I certainly wouldn't call that breakfast a simple meal. That's some seriously impressive campground cooking. Sounds great! When we stay in cabins, it's either grilling or microwaving for us. :o I'm looking forward to seeing what else you come up with.

No idea on what’s for dinner. Dropping DGS back at home, then we’ll decide I guess.

We have a fancy pancy brunch scheduled for tomorrow AM down at the harbor, so I’ll probably just have a yogurt tonight. Hahaha Gotta load up on the crab legs, melted butter & champagne tomorrow.

White gas or propane? I dragged around a 70’s stove (white gas) until we started going to WDW and the man ditched it in hopes that he’d never have to camp again. He was soo a ‘burb boy 😆.
I’ll probably just have a yogurt tonight.

The last of the vanilla yogurt mixed with a banana and fresh strawberries was dinner and dessert too.
The fridge is empty of all fresh food excepting carrots, celery and a mango. Hopefully the veggies will last until my return and the mango is going with us in some form or the other.
 
White gas or propane? I dragged around a 70’s stove (white gas) until we started going to WDW and the man ditched it in hopes that he’d never have to camp again. He was soo a ‘burb boy 😆.

Propane. I think the regulator is clogged or something. I was using it just fine for the bacon and half of the pancakes! Then I was only getting a weak flame on both burners. Tried a new propane canister and the same problem persisted. We had a second stove at home so just got that.

Thanks! It seems simple to me now. I used to go all out with the cast iron Dutch oven and coals to make meals. Lasagna, breakfast bakes, fresh peach cobbler, etc. I’ve gotten lazy. 😂 I’ll get back to it eventually. Our camper died a few years ago and we either tent it or rent cabins. It was easier when you could bring your fully stocked cabinets with you than these stupid camping bins!

Most definitely! When we had an RV, I made special meals that I didn't even make at home. It was vacation, after all. There were no limitations. Those were fun times, but I'm quite a bit older now. The days of making meals that take a lot of effort are probably behind me.
