My first homemade chicken pot pie. I already made the pie crusts and the filling, just got to put it all together and bake it. The filling is really good though, I roasted the veggies in the oven (broccoli and carrots tossed in olive oil and salted) added boiled potatoes cut into little cubes, and chicken I seasoned (seasoned salt, garlic powder, paprika) and sautéed in butter and then sautéed onions in the same pan after the chicken then shredded the chicken snd added everything back to that pan and scraped up the bits on the bottom of the pan, adding seasonings (salt, pepper, thyme) broth and whole milk. This is by far the best, most flavorful chicken pot pie filling Ive ever had.
