Tomato purée with seasonings, shrimp and feta cheese served over rice. I had this dish 10 years ago at a restaurant while visiting Cooperstown. I found a similar recipe but I changed it to the dish I had.
Yesterday was Sunday lunch with my parents. I didn’t feel like cooking so we ordered out to a local Italian restaurant.
Tonight is whole chicken, stuffing and a veggie.
Tonight was mac and cheese for me and the last of chicken cutlets in a wrap for DH. Tomorrow we are taking my mom out to dinner for her 73rd birthday since my dad is still in rehab after his hospital discharge.
Hubby did a Costco run and among our household items, he picked up some of the homemade chicken noodle. It’s yummy! Toasted up some ciabatta bread with garlic butter. and all good this evening!!
Pork tenderloin, green beans and baked potatoes tonight. Homemade butter cookies for dessert.
I wanted to make Whachamacallit bars (essentially Rice Krispie treats with pb, a layer of caramel and covered with chocolate,) but couldn’t find caramels at the little store around the corner from me and didn’t feel like going to the actual grocery store to get them. The butter cookies sufficed.
