What’s for Dinner Tonight?

Not sure why I waited until this weekend to cook a big meal but I did so it is what it is.
Tonight it’s smothered pork chops with grits, green peas and Brussel sprouts Cooked it with sliced shallots as I’d no more 🧅 left. If the need is there I’ll have a clementine for dessert.
 

Steak, broccoli/rice/cheddar casserole, and asparagus.
DD31 is "off meat" again so I'm in the whole "side dish as a main dish" mindset. I hate cooking 2 separate meals, but she also deserves a real meal and not just starch du jour and a salad.

Anyone have any good ideas for using tofu, other than as part of an Asian veggie stir fry?
 
Thanksgiving Dinner! DH, DS#1 and I head to FL and I'm not cooking T-Day for 3, DS#2 staying here in town, DD & fam going to inlaws other side of FL so I hosted Pre-Thanksgiving Dinner, included my brother and sister's families.

I cooked 20 lb turkey, homemade onion & non-onion stuffing, real mashed potatoes, fresh carrots, fresh green beans and Kroger's Cranberry Celebration Salad, oh and gravy. Forgot a picture before it was naked but the turkey was really pretty and everything turned out well. Not easy to time all that, so I cooked green beans in crock pot for first time. Loved them, will do again.

I got some of those foil muffin tins, packed turkey "tv dinner" for the three of us for Thursday.

The place is chaos today - I've hauled all the Christmas stuff up out of storage to try and sort out what I'm going to need. First year here in our new place and it will take some doing to get the decor just right. Everything I don't use is going straight to donation, so I wanted to get it there early enough that it can be of use to somebody this season. Anyway...all that to say I faked it tonight with a chicken pot pie made from rotisserie chicken, mushroom soup based sauce, frozen mixed veg and canned biscuits on top. Bagged broccoli slaw on the side. It tasted really great but I'd normally do it all quite differently. :o
 
Chicken curry is on the menu but think we do have some leftovers from last night so need to make sure that doesn't need using up! Think we have loads of mashed potato left so I might try to make croquettes or fishcakes in the new air fryer! Feel free to share any leftover mash recipes with me 😂

We always just molded patties from them, thicker than a burger and then pan fried them. Called them potato pancakes. Add some seasoning or cheese to them and they are a nice varied side.

I saw one recipe where they cut cubes of a softer cheese like havarti or brie, molded a potato ball around it so it looked like a meatball. They dipped in flour, then melted butter, then rolled in panko. Baked in cupcake tins. Looked so good and ooey cheesy when they opened it.
 
I cooked an arm roast yesterday in leftover spag sauce from takeout the other day + a ton of other seasonings. To be used this week since it is a chaotic week.

Tonight I will shred some of it and serve over seasoned rice with the sauce it cooked in, and then a side of broccoli. Top all with some parm. Quick and easy before kid goes to work.
 
Well, my dad is supposedly getting out of rehab Wednesday morning. Assuming that's the case...
Monday- Chicken parm w/ pasta
Tuesday- Garlic brown sugar chicken with rice
Wednesday- Marinated london broil and baked potatoes (dad's request after 3 weeks of hospital/rehab food)
Thursday- big assumption here that we make it to my brother's for Thanksgiving. I sincerely hope so!
 
Forgot to leave something out to thaw today so it was breakfast for dinner. Made bacon in the air fryer and two types of pancakes. Our usual chocolate chip pancakes and since I had leftover pumpkin purée in the fridge, pumpkin, cinnamon swirl pancakes. They were pretty good. I’d make them again.
 
Busy day. Made the pfferneuse cookies, half with a lemon glaze and half dusted in powdered sugar. Will bring some to elder sister’s for T Day; the rest go into the holiday cookie tin.
Also finished assembling a pate that’s currently resting in the fridge. Much smaller than I normally make but since I won’t be here for the December holidays figured I’d make a tea loaf sized one for the Thanksgiving table and a smaller ramekin sized one to go to Fl.

Smothered pork chop dinner leftovers were finished today along with a scoop of vanilla Häagen-Dazs.
 
Baked the meat pates today so that’s done now. Went to Murray’s Sturgeon shop on the UWS this morning. Bought some smoked trout to make an easy peasy rillette to complete the appetizers for Thanksgiving table. Now there’s something for the vegans, the pescatarians and the carnivores. Sorry, raw vegans, you’ll just have to suffer 🤣.

Bought some Italian wedding soup because I..I.. I was seduced. Alright I was just lazy, lol.
