What’s for Dinner Tonight?

I'm so far behind that I won't even attempt to remember what we've eaten in that time. :o We flew to DS's home for Thanksgiving, so we've been eating with him since Thursday. He's vegetarian, which is already a challenge for us. It doesn't help that I've been down & out, so it's been on DH to feed us.

Thursday - Chicken salad sandwiches & broccoli salad (I don't remember what DS had instead of the sandwich)
Friday - Japanese takeout
Saturday - Baked mushroom ravioli w/Raos sauce & parmesan cheese, bagged salad mix, ciabbata bread
Sunday - Veggie pizza
Monday - Broccoli cheddar soup & yeast rolls
Tonight - Loaded baked potatoes w/broccoli, mushrooms & cheddar cheese + bagged avocado, Caesar salad

Obviously, we're in desperate need of some very easy, vegetarian meal ideas. Maybe, something that doesn't include broccoli. :p Not that we don't like broccoli, but we've had it four nights out six.

Cold sesame noodles; add whatever veggies you like best. Julienned carrots and cukes are a favorite on this end.

Tofu fried rice. Personally, I like the texture of silken tofu best but use what you like as same for the add in vegetables. Hehehe, maybe use cauliflower florets to sub the broccoli?

Black bean soup- sauté equal parts onions and peppers plus chopped garlic in olive oil. When onions are translucent, add cumin to taste (about 1/4 tsp per can). Mix in canned black beans and veggie broth until soupy in consistency. When heated thru you can top in ind. bowls with sour cream and minced scallion tops. Add hot sauce if you like. You can also serve with cooked rice in beans if you like. A good way to use up a jar of commercially made salsa too. Uhh I frequently cook recipe free, lol.

Hot and Sour Soup -- the recipe uses pork and chicken broth, but I don't see why you couldn't use vegetable broth and sub veggie pot stickers for the meat. I always add extra tofu.

And the Cold Sesame Noodles (just add as much tofu as you'd like) and Tofu Fried Rice recipes linked by @NYCgrrl would work well, too!
Thanks for the recipes. It's supposed to get really cold here next week. The black bean soup will be perfect. DS has plenty of tofu in the fridge. I'm going to trust you guys that DH & I will find it edible in one of these recipes. If not, I'm blaming you. :p
 
Got a call from my BIL this morning. Apparently he heard his wife and I talking about the candied orange peel I made for the pfferneuse cookies and asked me to bring some with me tomorrow. So I peeled “supremed” a few more oranges today and made the house smell good. Tomorrow or early this morning, I’ll dip half in chocolate that my home attendant was kind enough to chop up.

Eating the rest of the Italian wedding soup tonight and for sure it’s cut up oranges and mint for dessert.
 
IDK what's wrong with me. Maybe that I've finally made it to a holiday break and also still don't feel well, that I just have no desire to do anything. I have two pies I needed to make today and they didn't get made. I guess I'll do it later or tomorrow morning.
As far as tonight, Mexican food.
 
I baked a small turkey today. Dh sliced it up and I put the bones in a bag to make turkey stock in a few days. We eat at my mom’s house tomorrow, but I wanted turkey for sandwiches, soups, etc.

I baked cornbread today so it will dry out a bit before tomorrow. I do make oyster dressing to take to mom’s.

Currently have clam chowder simmering on the stove. It will be ready soon for dinner tonight,

Yesterday was a leftover day. I had commandeered the oven for the cherry pie and sweet potato casserole that we’re bringing to my SIL’s house. We’re actually on the road right now. Left at 5am. It’s the only way to get off Long Island without sitting in traffic. (And even then, it’s not a guarantee. 😂) I’m waving to you as we drive past, NYCgrrl!

I am going to my parents and it will be a small group this year. DH caught my cold so he won’t be going. My mom’s BF and aunt are also sick. The girls are going to their moms in Maryland. So just the 3 of us so we are cutting way back.

Turkey, gravy, mashed potatoes, stuffing, green beans, rolls, and cranberry sauce. I made a chocolate mouse pie, blueberry pie is in the oven now and I also planned to make an apple crumble pie but that seems like a lot to have 3 pies for 3 people.
