What’s for Dinner Tonight?

I’m headed to a charity gala so it’s whatever they are serving. DH is having a Jamaica beef pie with some sort of side.
 

Scraping the bottom of the barrel here as expected....boxed mac and cheese for me. Burger on a flour tortilla for DH (he is calling it a quesadilla burger LOL). Thank goodness grocery shopping is happening tomorrow, but at least we didn't eat out or order out in the interim! Time to start restocking the freezer bit by bit in the coming weeks.
 
Made a light vegetable stock today adding leeks to the regular veggies. I think they will mesh better with the celeriac and parsnips which is the soup the stock is destined for. Yes, I really am obsessing now but I want this dish to be a perfect starter for the holiday meal and hey I’ve the time to get it “right”.

That leaves leftovers for dinner which is the last of the tuna puttanesca, pasta and green salad.
Tried on a pair of pants today that were difficult to close last spring and they are now easier fitting. So it’s working (Yay!!!) therefore no dessert wanted; I’ll save the grapes and clementine for tomorrow’s yogurt.

Did my grocery shopping FINALLY. Spent $100 at Shoprite and $40 at Aldi, but stocked up on meat (burgers, ground turkey, thin cut chicken cutlets, chicken tenders, london broil, chicken nuggets, and ready to eat chicken tenders) so we are set for awhile. DH is having a fried chicken cutlet sandwich with cheese and bacon. I'm having a buffalo chicken pizza (homemade). Nice to have the cabinets and fridge full again so lots of options.
 
Cleaned the fridge shelves, top to bottom, on Friday as something spilt on the first shelf, of course. Needed anyway to give me an empty palette to begin baking. Suspect this will be a high wire baking season since there is no one around me with any known kitchen skills.
Both my weekday and weekend workers are too new and I’m not having one of those “Why and how do you separate eggs?” head scratching moments. One question shows an inquisitive mind but the other…well, I’m not a good beginner’s teacher.
All of which is to say must pick recipes and techniques with care. Oh goody, another week out of my life,lol.

Pulled a frozen jar (Talenti sorbet containers are great for recycling!) of lentil cacciatore out and reheated. Served the stewy soup with a dollop of herbed ricotta. Vanilla yogurt and grapes for dessert.

Trader Joes party size mini meatballs in the IKEA Swedish Meatball recipe with either potatoes or rice is an amazing addition.

They have a nice flavor that goes with anything. BBQ sauce alone, spaghetti sauce, or the IKEA bootleg recipe.

Inexpensive but often sold out. Remember at Trader Joes sold out doesn't mean discontinued.
I grab a few bags and keep them in the freezer.

Made an omelette w/ fines herbes ( just a way to use up a lot of fresh herbs that would be wasted otherwise) and heated up some ratatouille for the side.

Took delivery of a mixed case of cider made the European way and glad I made the purchase (sometimes you have to be good to self) as it was really nice with tonight’s meal. Brought back memories of friends I need to see.
