What’s for Dinner Tonight?

last night DH went with DD and the grand kids to a roof top movie to see Coco, so I was alone. Had a chicken sandwich, Cheetos and chocolate chip cookies :eek:

Today the family is coming for dinner......trying to hit things for everyone is hard.
We are having Enchilada Casserole (DD's choice), chicken enchiladas with white sauce (DS and DGD like this a lot and don't care for the other), taquitos (DGS will eat those), corn, Spanish rice, chips with salsa and guacamole.
Dessert eclairs and Mexican cookies and pastries and Gluten free cupcakes for DD
 
Didn’t feel like checking out the kitchen skills of the new weekend worker so just reheated leftover bean, oxtail and orzo soup from last night. Added some frozen ricotta and herb dumplings to it. Will have some grapes and a clementine for dessert later.
 

Mrs. wabbott baked some bobotie. Her version is equal to or better than Boma, imo. Bakes it in a deep casserole, rather than skillet, andis more moist.
 
Still working through all the potatoes so I made loaded potato soup for lunch.

DH asked or Mac and cheese so we had that with a Cesar salad.

I took a ride out to an Apple orchard earlier and got a mix bag of seconds so I made two apple crumble pies. My parents stopped by and picked one up.

It’s a special occasion in my life so planned a meal to celebrate.

Green salad with lemon vinaigrette as a beginning.
Filet mignon with parsnip and carrot purée and peas; thanks to the nabe who found the parsnip in Manhattan for me.
A half bottle of Margaux went well with the meal.

A little later it’ll be strawberry sorbet in a meringue shell for dessert.

I want Mac and cheese, but had a salad (trying not to gain more weight).
 
Had enough parsnips left to make a nice pot of soup with celeriac and a grated Granny Smith apple added. Roasted a few hazelnuts, cracked and used as them as a garnish.
I really liked it, the soup is silky and light and the hazelnuts gave a new texture and meaty taste. I’m thinking this may well be a perfect holiday soup. Interim it was just what I needed this evening.
