What’s for Dinner Tonight?

Fried chicken with pasta salad and capris salad. I cooked the chicken on the side burner on the grill. I’m also unmotivated to cook. Not sure if it’s the weather or I’m in a food rut but I’m struggling to motivate to cook.
 
Busy today with the grand kids over.
DGD baked banana bread and made Pad Thai.
We worked on marking and labeling her 7 binders for school. Took a long time.
So plans changed, too tired to cook, so fast food it is
 
Scored peaches at a decent price at the farmers market and did a quick turnaround making them into gelato. Obviously, this is going to be a learning experience as after reading several recipes I opted for the easiest with the idea of adding the peelings and pits to a later batch. Boy, such a lower yield compared to strawberries! Same amt of berries would have yielded approx 4 Talenti jars but only 2-1/2 jars for the stone fruit . Oh well, less calories.

Tonight’s dinner was sautéed radishes with green tops and broiled pork chops.
Used up all the fruit I bought today (dumb) so no dessert this evening.
 

We had steak (DH, DD and DD’s friend), crab cakes (me and DD’s friend) mac and cheese, cantaloupe and leftover corn/bean salad.
 
We are having Greek bowls—marinated chicken. Chick peas, tzatziki sauce, Greek salad, feta cheese and naan on the side. If my DH was home I’d make rice.
 
I bought some red and Eastern potatoes at yesterday’s farmers market and I can’t say why besides them smelling just as if they came out of the damp clumpy earth. I held the line at 4, two of each kind.

The 2 red ones became an American style potato salad with hard boiled egg, mayo, mixed pickles, celery and peas (I dunno, the peas just seemed like a good idea). After boiling them I drenched them in the leftover brining liquid of bread and butter pickles. Then because there is no one to share it with I added some chopped ham and roasted peppers.

Yeahh! It’s truly summer and that’s what I’ll eat for dinner. Maybe with an ice cold Coke if I can wheel me (backwards no less😂) down to the vending machine on the 3rd floor.
 
Knowing my attitude of late I'll toss the pan and cutting board in the dishwasher and probably moan about washing the knives.

I would fool no one for even a glimmer of a second at this point. IDK, all of my kitchen ambition has evaporated or something. So many different demands on our time over the past few years have taken their toll I think.

Tonight's menu will be some shrimp grilled with lemon and garlic, mushroom risotto and a grilled veg, probably zucchini.
 
Last of the shrimp corn chowder that hasn’t already been portioned into the freezer tonight.

Tasted the peach gelato and it’s too lemony. Going to add more peaches next week but it’s fine sitting in the freezer until then.
 
I just got home and it’s after 7 so I’m going with something quick and easy. BLTs with tomato and cucumber salad. Garden tomatoes are starting to ramp up.

I’ll be able to pick string beans tomorrow and peppers are coming soon. Need to start looking for some ideas.
 
DH and I were in New Orleans for a week, so we have much atoning to do regarding dinner and healthy eating! Tonight I marinated chicken breast chunks, put them on skewers, and threw them on the grill. I also thin-sliced some Yukon gold potatoes and onions, added some garlic powder, butter, smoked paprika, and S&P, and cooked them in a packet on the grill. (Actually roasted the potato packet for 20 mins before putting the chicken on the grill.) Microwaved frozen broccoli rounded out the meal. I shouldn't have used butter on the spuds, but they were delicious!
