What’s for Dinner Tonight?

Tonight I’m making burrito bowls. I put the chicken in the crockpot and will shred it, we’ll have it over Spanish rice with avocado, tomatoes, cheese, corn, and black beans.
 

Boring - salad made with cabbage, kale, chopped broccoli, and romaine. Topped with peanuts, crispy noodles, and sesame seeds with a miso sesame dressing. I did have two slices of apple bread from the local bakery for dessert which was heavenly.
 
Being that Monday nights during the summer means I’m running with a ladies running group, I didn’t cook. DH had oral surgery today, so he wasn’t up to do much. Kept it simple and bought a few cans of refried beans and told the teenage boys to make dinner. They did. Yay for simple.
 
I was reaching the bottom of the pantry shelf today. I boiled and drained some pasta and added a can of diced tomatoes, some chopped up leftover chicken, onions and peppers, a hefty dose of balsamic vinegar, a bunch of spices, let it simmer a bit and put some parmesan cheese on top. It was pretty good.
 
Last night’s dinner was seafood salad leftovers as anticipated; still yummy.

Today, I’m off to the farmers’ market for at the least some peaches since I really want to make gelato this week. Have defrosted meat in the fridge so just hope to find some fresh veggies to go with it. Going to let my mind be made up by what looks good.
 
I made a GIANT crockpot of salsa chicken on Sunday and then DH got really sick/hospitalized yesterday. He came home today and so it will be leftovers from Sunday, if he can keep anything down. Otherwise, it will go in the freezer and I will make him toast and eggs.
 
Steamy weather here again, so not only attempting to avoid cooking, I'm now plotting lowest cleanup possible.

Putting some tilapia in foil packets with minced garlic, a little butter, some asparagus and some grape tomatoes cut in half. I'll make up some rice seasoned with some fresh herbs and probably cut up some of the fresh cukes from the neighbor's garden.

Knowing my attitude of late I'll toss the pan and cutting board in the dishwasher and probably moan about washing the knives.
 
My friend always invites me over to watch when a new Star Wars or Marvel show drops, and he always makes dinner for me. Tonight I have bought all the stuff for one of my favorites, butter chicken. He still has to cook it though! 😁

Probably should zip my lip whining about washing a couple knives. Props to those with the ambition to make cobbler and gelato, etc. Don't know if I'm just burned out or what, but I have zero ambitions in the kitchen anymore -- possibly below zero.
 
Well, after last night's dinner of homemade breakfast sandwich (DH) and chicken nuggets for me (leftover in the freezer from my niece's visit) we are moving in the direction of somewhat adult food. It's just been so darn hot that we have no desire to cook anything elaborate. So tonight, cheeseburger sliders on the grill on grilled brioche buns and fries in the air fryer.
