What’s for Dinner Tonight?

Leftover ham and sweet potato casserole, but I'm making some mini pizzas for lunches this week.

We pulled the grill out of the shed so tonight I grilled some chicken to go over a big salad. First grilling of the season always tastes extra good!

Home cooked cheeseburgers and fries for my husband and son. Broiled salmon and pasta mixed with oilve oil for me. yum!

Tonight was a modified Lidia Bastianich's Balsamic Chicken Stir Fry.I cut back on the balsamic vinegar .It has broccoli, peppers and is served over rice , everything is covered.

Baked pork chops, mashed potatoes (again) w/ gravy & broccoli

Made a two yolk omelette with cream added and filled it with some of the Easter pie filling and spinach. Hearty meal with a cup of green minestrone soup!

Tonight we are having hotdogs and snappys for dinner. Not my favorite but DD and I found the snappys on sale and it is DS day off and hotdogs are one of the few things that I cook that he eats.

They are a spicy white hotdog. They are made by Hoffman a local company that has started going national a few years ago.

Wegmans started in Rochester NY that is only about an hour away

I first heard about Wegman's when we camped upstate
Arrival day we went food shopping and you better get it right as from there it was often walk or boat-in sites with limited or no car access. We stayed at DEC and NYSP properties around the Thousand and Finger Islands predominately.

We all have days like that .
It looks a right mess outside, all wet and cold, so I’m just adding some cannellini beans, pieces of pancetta and a bit more pesto to the still in existence minestrone soup and calling it a day.

Doing up a stir fry with butternut squash, apples and turkey sausage over rice. Smells good! First time trying it.
