What’s for Dinner Tonight?

@LoveDaisy I make those peanut butter cup cookies and raspberry thumbprints too. I usually bake 10 or so different cookies. Once I start baking I'll post photos and recipes too. This year we missed the Festival of the Holidays so I'm going to make a couple of the cookie stroll cookies so we don't miss out completely! My brother's family is coming early to celebrate next week so I think I'll make the cookie stroll cookies for that gathering.

Tonight we're having Hasselback chicken with leftover cauliflower and butternut squash.

Sadly, nothing much accomplished on the kitchen end of life today. Was able to grind and measure spices for baking so that was useful. Informed last week that electricity would be cut off for the south side of the building and today was the day. Interestingly, the cellphones worked ( guess they learned from the last blackout) but that was about it within the apt. Was supposed to be back on by early afternoon but still no power as I write. A neighbor on the north side is heating up some soup but honestly I was in such a hurry to give it to her didn’t notice what kind; I’ll know soon enough.

Hi! I bake about 8-10 kinds and make about 1000 cookies over the holidays. I bring platters to all the holiday events I attend and give cookie boxes to friends and family.

I make them, cool, and freeze. I have a second freezer that I use for my cookie madness. I put a layer of parchment paper between my cookie layers. Most cookies hold up really well (my friend does a Christmas in July party and anything left I pull out for her party and people cheer when they arrive lol) I have found frosted cookies don’t hold up well. For those I frost after thawing.

If you are a Costco member I get my bulk holiday baking supplies there and find they are reasonably priced. I get 4 pounds of butter for $9.99, a 25 pound bag of King Arthur flour (my preferred brand) for $18.99, 20 whole vanilla beans for $11.99, and vanilla paste (huge jar of my favorite brand) for $19.99.
