What’s for Dinner Tonight?

Happy to.share my recipes. Here is the first one.

Gooey chocolate butter cookies

1 package cream cheese
1 stick butter
1 egg
1 teaspoon vanilla
1 box chocolate cake mix
Confectionery sugar

Cream butter and cream cheese. Add egg and mix then vanilla and mix. Add chocolate cake mix.

Chill for 1 hour

Roll into 1 inch balls then roll in confectionery sugar.

Bake 350 for 8-10 minutes



Note: You could use any flavor cake mix.

Tips:
I don’t use the food coloring
I make the dough then roll into inch balls then chill for at least an hour.
Make sure your cookie sheets are cold. I put my cookie sheets in the freezer in between batches.

Went to Macy’s Herald Sq for some fir branches and ribbon none of which they had. Guess this is what happens when you start your Christmas shop in September. Did find a hummingbird and pearl encrusted dove ornament and bought them instead. Then we wandered the streets taking in the Midtown holiday decor when we found ourselves in front of Virgil’s BBQ and decided it was a lucky omen. I ordered a trifecta bbq bowl ( chicky, brisket and pulled pork) with mac and cheese and collard greens. Probably more ingredients but guess I’ll discover it tomorrow since I brought home the leftovers.

Whipped shortbread

Tips:
This makes a lot of cookies. I frequently cut the recipe in half
Make the dough, roll into one inch balls then dip in colored sugar. Chill for at least one hour
Make sure your cookie sheets cookie sheets are cold. I put mine in the freezer between batches

Peanut butter blossoms

Tip
I have tried a lot of peanut butters and find jif works the best. It provides a real peanut taste and doesn’t get oily when I bake either it.

You need mini muffin pans to make these.

Thumbprints.

Tips
I cook mine for 9 minutes
Roll into 1 inch balls and make thumbprint then chill for at least an hour. Add the jam after its chilled but before you bake the cookies.
Make sure your cookie sheets are cold. I put mine in the freezer between batches

My DH uses this same recipe. And yes he is the baker. I am a very good taste tester.

Edit: he uses Jiff PB but only bc that’s what PB we use. Good to know it works best

Tonight we had Mac and cheese with salad. I planned to make tacos but mom dropped off Mac and cheese and I’m not saying no to her Mac and cheese!

I have already used 10 pounds of butter and most of a 25 pound bag King Arthur flour this holiday season. I have issues!

I agree. I can't stand for too long and get tired too fast......and always seem to have other things needing my attention. Today it was defrosting the big chest freezer in the garage.
And my family is only 7.....we can't eat that many cookies. They each get to pick two....some want the same and the grand kids only want their one favorite, so that all helps.

We had hamburger meat that was expiring tomorrow, so we had to use it. And we made soft tacos. Packed leftovers to go for lunches tomorrow. I also had carrots.
