What’s for Dinner Tonight?


We were SUPPOSED to grill steaks tonight, but it’s too windy today. We’ll go out to a bbq place. I just need to cook these steaks up at some point before we leave the campground tomorrow. I don’t want to waste it. We’ll head over to visit dd at her school, about an hour and a half away and check into a hotel for a couple of nights.
 
Last night, DD used a rotisserie chicken to make chicken stew with biscuits. It was really good; she is a great cook! Tonight I'll sizzle up some Trader Joe's garlic chicken sausages and serve them in buns. Sides will be sauteed multi-color peppers/onion/corn and some sort of pasta. At some point I'll make chicken stock as we have the carcass left from last night's chicken.

In case you don't have a chance to grill them, an employee living at the campground may want them. I suppose a fellow camper would be another option. Just a thought. I'm with you on wasting food.

We did think about that. But we wondered if people might be iffy about trusting that we kept it refrigerated properly, etc. It definitely won’t be wasted though!

IOE, people in campgrounds are typically pretty laidback. I get what you're saying though. I wouldn't be crazy about the idea of taking food from someone else. My DH, OTOH, would have no problem with it, if it was just him. Using it yourself is definitely the best option.
 
Stepped away from the defrosted provisions and embraced some canned goods to make “crispy artichoke heart with tuna and lemon zest rigatoni” courtesy of the NYT. Played with the recipe to make it my own and use up some goods in the fridge.
