What’s for Dinner Tonight?

Today is my eldest's 30th birthday and he is home from Chicago for the weekend,

Ordering Chinese food for dinner (Various Apps... Gen Tso Tofu... Sweet n Sour... Fried Veggie Rice... Veggie Lo-mien... Pork Egg Foo Yung)

Also making a birthday cake. I really only have one cake that I make, but it is a banging chocolate cake and I am frosting it with peanut butter buttercream.

We’re camping but since we just got here yesterday, we went out to a Mexican restaurant. I had beef and chicken enchiladas and a Paloma, dh had a chicken burrito and a mojito. Tonight I grilled brats and we ate them by the fire with assorted chips. We burned a lot of calories today on our hikes , so we deserved a side of chips. 😊
 
Busy, busy weekend trying to finish up at DD's house as the movers arrive on Thursday. Last night was grilled cheese and tomato soup (Campbell's, not DD's amazing homemade) and tonight we took everyone out for burgers. I'm beat... and there's still so much to do to be ready for Thursday!!
 
Looking at defrosted items for the week and decided it’s time to eat the onion soup. Not going to include the traditional crouton since I’m not eating carbs when possible. Opting for a Parmesan and Comte cheese crisp instead as a topping. Maybe have some fruit for dessert; haven’t decided yet.

Saturday was busy, busy so I made up some omelettes with some pumpernickel toast. Yesterday I needed to get some meals prepped for the in-laws' freezer so I needed a fast dinner plan. Made a large size pan of garlic butter tilapia with rice pilaf and steamed broccoli so we could drop off a warm dinner and put a few meals in their freezer as well.

I'm hoping I can squeeze enough out of tonight's leftovers to be able to portion out another dinner for their freezer. I know it gets so much harder to batch cook in the warmer months so I'm hoping to see how much I can do with routinely supersizing what I make for our dinners on a regular basis and trying to keep their freezer supplied without constantly marking out large blocks of time for batch cooking.
