What’s for Dinner Tonight?

Spent the day listening to the works of David Bowie. Today is the anniversary of his death and 2 days past his 78th birthday. How time flies!
Gave a call to a like minded friend and decided to spend the Lunar New Year together with each of us able to invite four more people. No decision if she’ll play hostess or I. She lives in Queens and of course I’m in the Bronx, so it’ll be a contest of two of the most unpopular boroughs🤣.

So as I make up guest lists, pulled a ziplock qt bag of Thai chicken and coconut curry soup (Tom Kha Gai) out of the freezer and heated it up with a few sautéed shrimp. No dessert tonight, think the warmth of the soup is enough.
David Bowie. Yes.


 
I always make extra burgers for the next day.
And I would like to say that I look for your post every day, just to see the baby giraffe stick his tongue out at me. Makes me smile every time.
We always do too! It's just the two of us, so we always have two extra burgers for a day or two later. :)

Thank you. It's actually three of them, believe it or not. FIL is 91 and has had a rough patch over the past couple years also. Some of his issues got stabilized over the past several months, but the stress of MIL's even steeper decline during the same timeframe is not helping to keep him status quo.

DD texted that she squeaked through her day just in time to drive home in the little snowburst and she was crawling into her bed to completely veg out and listen to some music for the evening. I told her she earned her me time and we would talk tomorrow.
Wow. I really feel for you. Going through it one parent at a time was devastating. I can't even imagine what you guys must be going through. I'm sure you all need a break. I hope your DD the relaxing evening she needed.
 

Tonight it was frozen pizza and salad from a bag. It was SUPER hard going back to work after the holidays and one crisis after another there. I met a friend for dinner out last night so DS made one of the meal subscription recipes. Tonight was my turn but I didn't even have the wherewithal for that. :faint: I've got to go out of town next week for (at least) a few days to care for an ailing loved one so it will be a while yet before we get back into a normal household routine. In the meantime, nobody will starve but there won't be any brag-worthy meals prepared either.
 
How do you make it? Enquiring minds want to know🙏🏾
Found a recipe years ago in my Better Homes and Gardens cookbook for making flavored butters... Cajun is thyme, cayenne, garlic and black pepper. So, I melt butter, mix in the seasonings, and toss my pasta in it. I like to saute mushrooms in the flavored butter, too, and then toss with the pasta.
 
Going out tonight. Dd has chosen Chili’s. She was supposed to get off work at 6:00, but just informed us it’ll probably be closer to 7:00. Then we have to get out there. Probably won’t be eating until 8:00. Not ideal, but can’t be helped. Tomorrow I’ll be making Gumbo.
