What’s for Dinner Tonight?


Tonight's dinner was a C-/D+ at best. I tried. I was going to make a ravioli bake/lasagne and use up some leftovers in the process. I sliced mushrooms and onions and sauteed them, then threw in some leftover spinach. I also "frizzled" some prosciutto that we'd bought for Christmas eve and never opened (it was still within the freshness date). I layered sauce, cooked cheese ravioli, the veg/meat, some ricotta, some mozzarella, and more sauce, then another layer of ravioli with dobs of ricotta, some sauce, and mozzarella. I let it all bake down for a bit and get bubbly. Well... it lost something along the way, I guess. The men in the house thought it was fine, but DD and I are both having tummy-grumbles tonight. SIgh. It sounded so tasty and tasted so... not...

@NYCgrrl If I lived closer, I'd be happy to help you with those lamb chops! I adore lamb, in any way, shape, or form!
 
Yay!! Thank you Jesus! :worship:Last night we had our first home-cooked meal since the old kitchen was torn out on November 28!! The reno isn't completely finished but it is done to the point that we were able to have the appliances installed and the environment made clean enough for food prep. We had roasted salmon, rice pilaf and peas with a simple cucumber and tomato salad. Tonight we had bacon and eggs. Woot!! :banana:

The reno isn't completely finished but it is done to the point that we were able to have the appliances installed and the environment made clean enough for food prep. We had roasted salmon, rice pilaf and peas with a simple cucumber and tomato salad. Tonight we had bacon and eggs. Woot!! :banana:

Yay! This guy s great news!! Congratulations on making it through the remodel.
 
Last night I made Schnitzel as we don't have any local German food at all.

Did not take a photo, but this is from the last time I made it and took a photo.

Made everything except the Knockwurst from scratch. (well the anchovies are from a jar)
There is a Sweet and Sour German Red Cabbage under the schnitzel as well.
 
Trying to go Vegetarian at least 5 days a week for a while to see how we feel. So, tonight is veggie tacos.
I have been trying to do one vegetarian dinner a week (which usually covers 2-3 nights of food) along with having vegetarian breakfasts. Right now I am out of that because I am just trying to clean out the freezer before a stock up trip next weekend.

I don't do vegetarian for the most part, but for me Indian is probably the best option when I do make vegetarian stuff.

This is night five of our new vegetarian experiment. Tonight I’m roasting spaghetti squash and topping it with a lemon-caper-mushroom cream sauce. Salad and garlic bread on the side.

This week I made cauliflower fried rice chock full of veggies, banana pancakes with blueberry compote and a side of fruit, veggie lo mein one night and last night’s veggie tacos.

I used the same chili-lime marinade recipe I use for chicken fajitas for the veggie tacos and it was outstanding. The veggies were- bell peppers, baby portobello mushrooms, chickpeas and yellow squash- all roasted. Then topped with avocado, tomato and queso fresco on corn tortillas. It was so filling!

Next week I’m making mole enchiladas with cheese inside instead of chicken and Mexican rice with lots of veggies.

Tex-Mex lends itself to vegetarian options very easily as does Chinese stir frying. I’m going to experiment with tofu next week as well.

I have to say I have a ton more energy this morning on day five and my inflammation is down. I think we will try this no meat thing for a few months and see if it sticks.
 
Defrosting a batch of homemade chicken tortilla soup. Throw together a salad with some avocado. Voila. Exciting Friday night dinner plans! LOL
 
Ooh! I’m intrigued by pizza soup. What’s in it?
I use Italian sausage, pepperoni, mushrooms, black olives, onions.
Them mixed with pizza sauce, Italian seasoning, garlic, Parmesan cheese and a couple cups of water (I use stock). Top with shredded mozzarella.
I make it in the Instant Pot.
Very good and no crust.
You can put whatever you want in it......maybe more veggies or different meat.

i have been craving this like crazy recently. i just got some of the maggi seasoning mix and the knorr gravy mix. we have a spaetzle maker and recipie. can you share your sweet and sour german red cabbage recipie?
