Please for the love of all that is holy, don't use flour tortillas for your enchiladas. Corn tortillas. Always corn tortillas.
And place them one at a time in skillet of hot oil, very briefly, remove with tongs, in order to make them soft. Drain on paper towel lined dish. If they are more crispy than soft, they were in the hot oil too long.

Yep. That’s the method I use and the traditional way of doing it.
 
Nice dinner and talk with Son. We ate at Dinosaur BBQ, a local outpost from upstate that his father and I took him to when he was a kiddo. Ordered a giant “obviously he’s missing American food” platter of spare ribs, brisket and short ribs. I was happiest with the side salad that I ate with a slice or two of brisket; he loved everything in an equal opportunity kind of way😎.

Came home and finished the leftover wine, talking into the wee hours and watching the 9/11 lights.
 
I don't know if last night's bean soup is waging war on my innards or what, but I have had a stomach ache and sore intestines all day. I copped out on dinner and bought a pre-made chicken pot pie at the grocery store. It should be ready in about 15 minutes. Gonna continue the cop-out and make instant mashed potatoes and bagged salad to go with it. Nobody will complain, they are all just thankful that there's dinner. I have a pretty cooperative crew, here.

I've had 15 bean soup mix in the crock pot with some pork shanks all day today. Getting ready to have some in a few.

I made lentil caccitore for the freezer today. Which by the way is almost filled to the rim. Voids are just temporary spaces it seems.

Asked son what he wanted for dinner this morning and after the polite “Anything you make is fine with me” answer, he made it known that oxtail stew was wanted. And once again I thank whoever invented the electric pressure cooker. He’s having a cultural ID mixup and couldnt decide if he wanted French or Caribbean version so I made up his mind for him and made Jamaican style.
Oh and by the way there is already oxtail stew in the freezer but no sense in telling him; everything will be eaten in time.

Serving it with sweet potatoes and dumplings. And rice. Because some people can eat all the carbs and never gain a pound🤷🏽‍♀️
 
Last night's dinner: Pati Jinich's Enchiladas Suizas, inspired by her childhood trips to Sanborn's in Mexico. Chicken Enchiladas with a green tomatillo sauce, and topped with Oaxaca cheese. I thought there was way too much cheese, and a bit too much sauce, but I followed this first-time recipe to the letter. Next time I'll reduce both. Flavor was fresh, vegetal, complex. A keeper!

I worked in office the last few days, so my ppl know I don't really cook those days. I had made a roast, cooked in homemade salsa, earlier this week. And then I had spanish rice and chopped tomato/onion/lime salad to make meat/rice bowls out of. I htink they had leftovers of that the last few days. Or sandwiches, I cannot recall. I had baked some potatoes and blanched some broccoli for my quick dinners. So, that was that the last few nights for me.

Today, I am home, so I have a giant vat of homemade sauce going. It smells SO good. I think I am going to make a noodle bake out of it tonight , with some fresh green beans. But, will see. I might just end up with some spag noodles and garlic bread.
