What’s for Dinner Tonight?

Well, DH left the refrigerator door ajar last night, so we have very little left in there. It was at 60 degrees when I got up :(
All leftovers got tossed, mo milk, no eggs, no yogurt. no soft cheeses, no mayo.
So.....it will be freezer food tonight.....not sure about lunch though.
 

I got some Chinese takeout from a place that opened recently and I ordered enough to have some for dinner tonight. General Tao's chicken, egg drop soup and some egg rolls will be pretty good later tonight.
 
My sister has Celiac and is gluten-free, and I'm spending the next ten days with her in Philly sitting for my nephew's elderly dog (yes, I transported my PC to Philly so I'd have something to do while she's at work), so I've been hunting down gluten-free recipes. Tonight is really easy-roasted veggies with a Balsamic glaze and Feta crumbles over rice. I found a recipe for Jalapeno popper chicken that I'm going to try tomorrow in the air fryer.
 
I have a dehydrator and I usually do a batch or two of ‘sun dried tomatoes’ I am not sure if that is what you do when you dry them in the oven? I’d love to hear more.
Probably the same thing. I think I added a little dried basil and some garlic salt. They were SO good to add to food later or just snack on.
 
We are having our trees trimmed this morning, so after that I will go to the grocery store and replace a lot of the things we lost when the refrigerator was off.

So I will have eggs again.......so a Frittata tonight with ham, black olives, green onions, cheese in it.
 
I've got several tasks I'd like to complete lined up at the shelter so my next few nights will more than likely involve eating at the diner. Not sure what I'm having, but I'm sure it will be good. Love the food there.
 
Another concert night with friends here to enjoy the beautiful weather. I'm planning to grab a Greek salad with gyro meat from the food trucks. No cooking, no cleanup, beautiful weather, fun music and friends -- I'm kind of stupidly excited, but it promises to be one of those perfect summer nights.
 
Been busy going thru recipes and serving ideas for the December holidays. This year, they’ll be spent at WDW and since part of the time will be spent at a DVC villa, why not use the kitchen?
So between books, websites, my notes and YouTube watching I’m just not that hungry so went back to the freezer for portioned soup.

Tonight it’s chicken tortilla soup minus the tortilla; still tasty. A fresh peach for dessert and I’m happy.
