What’s for Dinner Tonight?


A version of Marry Me Chicken, from the meal-subscription service. It wasn't very authentic though; used tomato pesto instead of sun-dried tomatoes and didn't call for any garlic. It wasn't one of our more successful meals, I didn't think. The side was buttered orzo with fresh spinach wilted in and I did really like that.
 
I just made a triple batch of salsa. I’ll give some to my parents and a friend and I’ll keep some for us. I used all lot of questionable tomatoes, anything split, with a bad spot or really ripe. I also used 2 large bell peppers, 7 jalapeños, and cilantro from the garden. I still have over 50 tomatoes and 2 pints of cherry tomatoes. Hopefully when people pick up their salsa they will take tomatoes.

Sharing the weekend since it's been a special string of days...

1. Saturday was a belated bday dinner for me at a Cajun/Tex Mex fusion place. I had a 4-course bday meal :) Shrimp gumbo, Cajun Empanadas, Shrimp and cheese grits with an andouille cream sauce with a side of Chalmette macaroni, and bread pudding for dessert. The also gave us a complimentary order of a red bean "salsa" with tortilla chips.
2. Sunday was a last home cooked dinner with the family before DD goes off to college- chicken stroganoff.
3. Tonight is dinner at a favorite local Mexican restaurant since we need to hit the road in the middle of the night to make it for move in time tomorrow.
 
We had BLTs with capris salad. I used 4 more tomatoes with dinner. My parents stopped by for salsa and blueberry muffins and they took 12 tomatoes. I also used 14 tomatoes to make the salsa. 30 tomatoes off the counter today! 🤪 🍅
 
What is your favorite gold sauce?
Gold sauce is hard to find up here; I get it from Trader Joe's. We much prefer this to red BBQ sauce!

Supper was leftovers: Gold sauce BBQ, shredding Mexican pork (black beans, roasted diced tomatoes, cumin, garlic, and chili powder), creamy chicken/wild rice soup. I don't know what people ate; I worked late and went out to a local brewery where I had a west coast IPA and salt-n-pepper calamari.
 
We're on the road again. DH & I ordered calamari, ahi tuna & key lime pie takeout from our hotel restaurant. We didn't eat the pie, so I guess that's breakfast in the morning. :teeth:

I’ve been stuck on this on vinaigrette recipe for a few weeks now. Can’t stop making it. It’s tasty on so many things. Tonight was a chopped salad with Napa cabbage as the base and a whole hodgepodge of veggies, nuts and berries.
